1. What is the U.S. term for the process of taking stitches off the knitting needle when a piece is complete?

Answer: Binding Off

When a piece is completed, the knitter binds off the stitches from the knitting needle so that the piece won't unravel and will have a nice, finished edge. To accomplish this, the knitter knits (or purls) two stitches from the left-hand needle to the right-hand needle.

Then the first stitch is slipped over the second stitch and dropped off the needle, leaving one stitch remaining. Casting off is the British term.
2. When measuring the gauge, what should the knitter do if there are too many stitches to the inch?

Answer: Try a larger size needle

The gauge is very important for the knitted piece to fit properly. Patterns instruct the knitter to cast on a certain number of stitches, which varies according to the size of the finished piece. If a knitter gets too many stitches to the inch the piece will be smaller than expected, per the pattern. Using a larger needle size will reduce the number of stitches per inch.
