Two 'E's and an 'R' are needed to refill an EspREsso.
Espresso originates from Italy and is a small, but highly-concentrated coffee drink made by forcing very hot (nearly boiling) pressurised water through the coffee beans. Espresso is generally measured in 'shots' and typical servings include single, double or treble shots.
(Note: 'Expresso' is sometimes used as a variant spelling of espresso, but doesn't fit the word puzzle clue in this case.)
2. LTT
Answer: Latte
You just need to add an 'A' and an 'E' to make a lAttE.
Latte is the common short form name for a caffè latte and given that 'latte' is the Italian word for milk, it should come as no surprise that this is a coffee with milk. Specifically, it is espresso coffee with steamed milk and, when served up in coffee shops, the milk is often applied so that the drink is topped with a pretty decorative pattern.
3. FLT WHIT
Answer: Flat white
There's just one 'A' missing from the first word and one 'E' from the second, so what we have here is a flAt whitE.
This is another espresso and milk drink and is very similar to a latte. The main differences are that it uses smoother microfoam milk and has a higher coffee-to-milk ratio.
The history of this coffee variant is disputed, but it seems to have originated in either Australia or New Zealand in the 1980s.
4. PPUINO
Answer: Cappuccino
Froth up a ppuino with 3 'C's and an 'A' to get CAppuCCino.
The cappuccino is yet another espresso and milk combination but is one of the most popular and enduring of these drinks, having originated in Austria in the 18th century. Traditional cappuccinos are made in three layers - a base layer of espresso coffee, covered by a layer of hot milk, and then topped with milk foam. The name comes from the similarity of the drink's colour to the habits worn by Capuchin monks.

Answer: Irish coffee
You need an 'R' in the first word and a 'C' and two 'E's to stabilise an iRish CoffEE.
Irish coffee is a cocktail of hot black coffee, cream and sugar with Irish whiskey stirred in. While methods for making this drink vary, in general the ratio of coffee to whiskey is around 2:1.

Answer: Mocha
Oh! It was an 'M', a 'C' and 'A' that needed to be added to make MoChA.
A mocha, or caffè mocha, is essentially made in a similar way to a latte but with the addition of chocolate - either in the form of cocoa powder, chocolate syrup or real lumps of actual chocolate. The drink takes its name from the city of Mocha in Yemen, which was a major trading centre for coffee beans rather than anything to do with chocolate.

Answer: Macchiato
Most of the missing CREAM letters (an 'M', two 'A's and two 'C's) need to be added to the front of what was given to make a MACChiAto.
A macchiato is another espresso-based coffee drink, but this one only contains a very small amount of milk. The idea is that it is just enough to give the drink a "marked" appearance. Of all the espresso-with-milk variations, a macchiato is the one with the highest coffee-to-milk ratio.
8. OTDO
Answer: Cortado
CoRtAdo needs an extra 'C', 'R' and 'A' added.
A cortado is a Spanish espresso-and-milk type of coffee drink traditionally prepared as roughly 50% coffee and 50% milk. The milk in this case is steamed, but not frothed up. It is also traditionally served in a small glass rather than a ceramic cup.
9. ISTTTO
Answer: Ristretto
Add two 'R's and an 'E' and you get a RistREtto.
A ristretto is a more concentrated version of espresso that uses the same amount of coffee beans but only half the amount of water. The coffee is also extracted in a faster time, which changes the chemical composition of the drink and means that there is slightly less caffeine in it compared to an espresso.

Answer: Americano
The AMERiCAno needs full CREAM added in (and an additional 'A' as well').
Actually you wouldn't add any cream (or milk) at all if you were making an Americano. It is also based on espresso coffee but has extra hot water added rather than milk. On a hot day you could have an iced americano by using cold water instead.
