Albany Beef was the flesh of the Atlantic sturgeon fish which was actually plentiful at the time. Sturgeon is the fish that caviar is primarily obtained from. Due to overfishing and habitat loss, the Atlantic sturgeon is considered to be threatened on the Endangered species list.
