As far as we know, potatoes were first used by the Incas in Peru, at least 1800 years ago. They were brought to the rest of the world by explorers in about the 1600s. Potatoes are related to tomatoes and tobacco, and they are members of the nightshade family; except for the skin, they don't have a lot of fibre. The skin, when dried, consists of more than 50% fibre.

Because many of the nutrients in potatoes are water-soluble, it may be better to eat baked or roasted spuds. Unless they are cooked in fat, or fat is added before eating, they are actually fat-free and beneficial for the stomach, spleen, and intestines.

Starchy varieties of potatoes should be used for baking and frying and can be used to make crispy potatoes, hot chips, wedges or hash browns. Waxy spuds have less starch, but they contain more moisture and sugar. They hold their shape well, so use them for potato salad, in stews and your favourite chowder. All-purpose potatoes are a middle of the road sort and achieve middling results for fries or mashing but are good for something like scalloped potato (or Pommes Dauphinoises).
