The rules regarding the Nazarites (also Nazerites, Nazirites), a group of Israelites who dedicated their lives for a period of time to the service of God through special vows (most famously, Samson), are outlined in Numbers 6. There is no mention of honey, so presumably it is allowed. Perhaps honey made by bees who collected from grape vines would be an issue, as all grape-related foods are explicitly forbidden. https://www.biblegateway.com/passage/?search=Numbers%206&version=NIV
This is the kind of Bible passage which has led to acres of writing discussing the practical application of the broad principles stated in the Torah. https://en.wikipedia.org/wiki/Nazir_(Talmud)
