Greenland sharks are poisonous for humans to eat. These animals lack kidneys, so their flesh contains ammonia and other toxic substances.
To neutralise the neurotoxins that Greenland shark meat contains, it may be hung for several months. Alternatively, techniques including boiling, drying (hanging) or fermenting are used.
