Why was the extra t added to Juliett in the NATO alphabet?

Because the alphabet was to be used by people speaking many languages, the extra t was added to make the pronunciation clear. To someone who speaks French, for example, the name Juliet would end in in (sort of) a long A sound.
"Alfa" and "Juliett" are intentionally spelled as such to avoid mispronunciation
