The reason Fat Free (Skim milk) costs less is because it contains less butterfat. The producers of milk must pay the farmers (providers of raw milk) based on the components present in the milk (protein, butterfat, etc.). Thus, it costs the dairy less to make Fat Free and this allows them to charge the customer less.
