How is Judas Iscariot depicted in Leonardo da Vinci's painting, "The Last Supper"?

There is much symbolism in DaVinci's "The Last Supper." Judas is depicted as holding a money bag in one hand and reaching for a plate by Jesus with the other hand. Judas has also knocked over the salt dish which could be symbolism for betraying Jesus. They had the expression "Bretraying the salt" meaning to betray one's master. Perhaps the bag of coins is the silver paid to betray Jesus or simply since Judas was the money keeper for the Apostles. It is noted that Judas is the only one with an elbow on the table. Perhaps that was bad manners back then as it is now!
