Sawmill gravy is a delicious, calorie-dense savory gravy containing sausage that is poured on biscuits. The origin of the name comes from the early 1800s Appalachian lumber workers who would eat the biscuits and gravy as a hearty breakfast to keep their energy up for the demanding work. The gravy is still a popular Southern US breakfast item.
