Why were some offspring of British monarchs given the surname "Fitzroy"?

The name "Fitzroy" comes from the Norman term for "son of a king" and was often used by Kings to designate their bastard sons. Probably the most famous Fitzroy was Henry VIII's son Henry whose mother was of the mistress Elizabeth Blount. Henry was ever worried about succession and wanted everyone to know he had a son, even if he was born out of wedlock.
