The longest a human has survived without food or water is 18 days. Camels rutinely go for two weeks or more without a drink. Koalas extract the water from the leaves they eat (as does any other animal that doesn't seem to ever drink).

tardigrads, sea monkeys, tadople shrimps, etc. can survive in dormant eggs or cysts or whatever for centuries without water, in the heat, cold, etc.
and they're not animals but bacteria have been known to survive inside salt crystals for... I think millions of years
and not all animals drink. some just let water diffuse into their cells.
