The traditional Christmas Eve meal consists of twelve dishes, honouring the twelve apostles. Exactly which dishes are served can vary from region to region and even family to family, but we'll look at some common ones here. Christmas Eve is the last day of the Advent fast, so the traditional dishes are meatless, to observe the fast. The celebration traditionally begins with the appearance of the first star in the eastern sky.

Kutia is the most central dish of the celebration. It's a porridge of wheat berries, with sometimes rice or barley, sweetened, and usually including dried fruits, poppy seeds, and nuts.

Borscht, the beet soup or stew, is a well-known Ukrainian dish. It is usually made with meat, but for this meal a meatless version will be served. It will probably contain, along with the beets, potatoes, carrots, and onions.

Varenyky or pierogi are dumplings often stuffed with potato and cheese, but for this meatless and dairyless meal may be filled with cabbage or sauerkraut, or maybe fruit as a sweet offering.

Holubtsi (cabbage rolls) are large cabbage leaves, rolled around a filling of usually rice, meat, and some vegetables, but for Christmas Eve the meat will be left out. They could also be filled with potatoes. They are usually cooked in a tomato sauce (my mother always used tomato juice) but I have seen them with a mushroom sauce, and Pidpenky sauce is a standard on the Christmas Eve table.

Kolach is a beautiful bread; the intricate designs worked into the top have symbolic meaning for the Christmas season. You will often see it with a candle burning in the centre. Pampushky can be fried like little doughnuts, or baked like little bread rolls. If they are savoury, containing maybe garlic or dill, they work well as an accompaniment to soups and stews, while the sweet versions, dusted with powdered sugar, may be filled with poppy seeds, or stewed fruit such as apricots.

Fish is traditionally not considered a meat dish for fasting purposes, so fish often has a place on the Christmas Eve table. It can be plain or fancy, maybe pickled.

Uzvar is made from dried fruits which are simmered with spices like cinnamon, and then sweetened. It is usually served at room temperature. Perekladanets are a layered pastry - a yeast dough is layered with nuts, jams, and poppy seeds.

Other common dishes for this meal might be cabbage soup, beet salad, mushrooms, or a potato dish.
