quiz
Quiz Answer Key and Fun Facts
1. Ethiopian food is generally eaten with the hands. It is served with injera, a spongy flatbread made from what ancient grain?

Answer: tef

If you visit an Ethiopian restaurant (which I must confess I have only done in the US, haven't traveled there), you generally eat communally, often sitting on the floor. Many of the dishes are stews, and are often fairly spicy.
2. What type of restaurant would you most likely be patronizing if you order a tajine?

Answer: Moroccan

A tajine is both the food and the cooking pot, which is covered and thus allows slow cooking and collection of cooking liquids.
3. Persian food classically uses a red, astringent powder made from which plant?

Answer: sumac

Yes, this sumac is related to poison sumac, and to poison ivy - they are all in the genus Rhus.
4. In Brazil, steak is often served with this on the side. The meat is dipped in it before eating.

Answer: tapioca powder

Tapioca is a root vegetable which goes by many names around the world - yucca, cassava, manioc. In Brazil, farofa is the powdered, toasted manioc served with steak. I made up the other answers, although Hoisin sauce is pretty close to fermented black bean paste. Coconut mayonnaise sounds yummy - maybe I'll invent it!
5. Rijsttafel is an elaborate meal with rice and many small side dishes. The name originates from the language of which colonizing country?

Answer: Netherlands

Rijsttafel, or "rice table" is served in Indonesian restaurants - it was brought to Europe by people involved in the Dutch East India trade.
6. I'm enjoying a steaming bowl of saimin, a soup with fish stock and noodles. My bowl has Portuguese sausage and Spam added as a treat. Where am I?

Answer: Hawaii

Anybody besides me hear Vikings singing in the background? Saimin is an amalgam of ingredients and styles from many of the peoples who settled Hawaii.
7. My friends are going to take me to Cafe du Monde for beignets. They warn me that this food can be messy. What color clothes should I wear so the mess doesn't show as much?

Answer: white

No nitpicking, I know white isn't technically a color. Beignets are fried squares of dough, liberally topped with powdered (confectioner's) sugar. The only items served at Cafe du Monde are beignets, coffee and orange juice. Open 24 hours per day for well over 100 years, it's my favorite place in New Orleans.
8. I love pierogi, which are half-circles of dough filled with cheese, onions, potatoes or meat. I've had them boiled and fried, usually with butter or sour cream on top. Which country listed below is most closely associated with pierogi?

Answer: Poland

According to Wikipedia, the similarity of pierogi to Asian potstickers has fueled speculation that they were brought to Europe by the Mongols or Persians.
9. On a trip through Italy, I became enamored of the dessert called "panna cotta." This treat most resembles which of the following?

Answer: custard

Panna cotta literally translates as "cooked cream." It is silky and white, and a lot less heavy than it sounds. It is usually served with fresh fruit or chocolate or balsamic vinegar or Saba, a grape extract. Thankfully, it isn't that hard to make at home!
10. Sometimes the "show" at a Greek restaurant is even better than the food. I love to order this appetizer, which is a plate of flaming cheese extinguished at your table accompanied by shouts of "Opa!".

Answer: saganaki

Major ingredients in Greek cooking are olives, lemon, and tomatoes. Remember, a Mediterranean diet is supposed to be good for you! Souvlaki is skewered meat, spanakopita is spinach in phyllo triangles, and skordalia is a garlic sauce.
