The tossed salad brought to the trivia supper was actually a salad of mixed spring greens with a lite vinaigrette dressing. Spring greens in North America often refer to a mixture of greens from kale, collards, turnip leaves, swede leaves, young cabbage, and leaves from other cruciferous vegetables. It has a more specific meaning in Europe and refers to a specific vegetable similar to kale that is rather close to wild cabbage.

Or just rinse the veggies, put them in a glass bowl, cover with waxed paper or a loose lid, and microwave for 2-3 minutes for many veggies, or up to 5-8 minutes for asparagus.

1 cup soaked cashews
4 oz. firm tofu
4 oz. vegan cream cheese
4 oz. vegan sour cream
2/3 cup maple syrup
1 tbsp lemon juice
1 tbsp vanilla extract

Drain cashews and add them to the blender with the rest of the ingredients.
Puree all ingredients. Pour into pie crust and spread evenly with spatula. Bake for 20 minutes at 350°F, then 20 minutes 250°F to avoid burning crust. Chill overnight.

A minister named Graham invented a health food in the nineteenth century that was named after him: graham flour. The Rev. Sylvester Graham (1794-1851) would grind the wheat bran and wheat germ coarsely, but the endosperm finely, then recombine all the components together into a coarse flour with a long shelf life. Most modern mainstream brands of "graham cracker", however, don't use real graham flour, so one has to shop for real graham crackers in specialty stores.

A "filbert", by the way, is a species of hazelnut (Corylus maxima) ranging from the Balkans to Turkey. It's mainly used as a filler in packages of mixed nuts.
