Quiz Answer Key and Fun Facts
1. What is the proper water or milk temperature for yeast to ferment?

Answer: lukewarm

If your water is cool or cold it will not ferment at all. Boiling water will kill the yeast thus not yield any fermentation for your bread to raise. Lukewarm water will activate the yeast and allow fermentation when your bread is fully mixed together.
2. What is the proper number of folds for croissant dough?

Answer: 3

If you don't fold croissant or puff pastry dough, the butter could start to ooze out and prevent the dough from raising. It is the water from the butter that creates the steam and provides the layers in puff pastry and croissants.
The proper number of folds for puff pastry, by the way, is five, but if you want it flakier six is permitted. In short, the number of folds you give croissant or puff pastry dough depends on how tender or flaky you want it.
3. Bringing chocolate to a sheen is called what?

Answer: Tempering

Tempering occurs between 84 & 86 degrees F so it is very fickle.
4. Made of parchment paper this tool can be used to pipe lettering onto cakes, cookies, and other patisseries?

Answer: paper cone

The paper cone is a good replacement for the straight circle tip. Cut the paper with a scissor to the proper thickness and use for the laying of glaze, frosting, etc.
5. Pithivier and dartois are cheap forms of a king cake.

Answer: True

The king cake is used on Three Kings Day which falls on January 6th. Inserted into the middle of the puff pastry is a layer of pastry cream mixed with almond cream. A royal figurine is inserted into the cake before it is baked. Whoever finds the figurine is king or queen for the day and a crown is put on their head.
6. What is another name for mille-feuille?

Answer: Napoleon

Mille-feuille is puff pastry rolled extremely thin then layered between two heavy sheet pans then baked.
7. To what temperature should the sugar for Italian Meringue be cooked (in Fahrenheit)?

Answer: 246 °F

Italian meringue requires at least two people to do because of the crucial timing between the egg whites and sugar. If you let the sugar become too cool, the sugar will be too thick to combine into the egg whites. If it is too hot the egg whites will become scrambled.
8. With what two substances do you need to clean copper pots?

Answer: Salt and vinegar

It is a good idea to clean the copper pot with a piece of steel wool. The reason you need to do this every time before you cook with copper is "verdigris", a very toxic poison, will form on it.
9. Equal parts of sugar and water create what substance?

Answer: simple syrup

Bringing equal parts of sugar and water to a boil makes simple syrup, which is a great sweetener for tea and coffee. In the baking world, simple syrup is used for moistening cake layers.
10. Burnt Caramel is also known as this card game?

Answer: Blackjack
