Quiz Answer Key and Fun Facts
1. Let's start with a classic. The recipe for chocolate chip cookies is well known and can be found almost anywhere. Which popular brand has the recipe right on the bag of chocolate chips?

Answer: Nestle Toll House

The Nestle Toll House recipe comes from Ruth Graves Wakefield, owner of the Toll House Inn. Whether you use the Toll House recipe or a different one, the cookie is still good and nothing beats homemade. You can also add white chocolate chips, M&Ms, or peanut butter chips to your cookie.
2. When baking, sometimes you don't have all the ingredients. If your cookie recipe calls for buttermilk what can be used as a substitute?

Answer: milk with a tablespoon of vinegar

There are many buttermilk substitutes out there. You can also use milk and a tablespoon of lemon juice, water and sour cream, watered-down plain yogurt, or plain kefir. However baking soda and vinegar is not a buttermilk substitute, it is actually a homemade cleaning solution.
3. Everybody loves cookies, especially kids. An easy recipe for baking with kids is a thumbprint (or fingerprint) cookie. What is the most well-known ingredient in this cookie?

Answer: jelly/jam

To make thumbprint cookies: mix together the needed ingredients (flour, sugar, vanilla, butter, etc.) roll into a ball about one inch big, make an indent with your fingertip, fill the indent with jam or jelly, then put them in the oven. Some people also use Hershey kisses in the center instead of jelly.
4. Making sugar cookies and getting out the different cookie cutters can be fun. But sometimes it turns into a mess. Which of these is a good tip to make rolling the dough easier?

Answer: put the dough between wax paper

Another good tip is to use a lightly-floured surface (too much flour isn't a good thing) or use confectioners' sugar instead. And if you do use wax paper you can scrape off the leftovers and add them back into the dough.
5. Sometimes you might need to bake for someone with an allergy or you have an allergy yourself. Which of these is NOT a substitute for eggs?

Answer: milk

When using flax seed: mix three tablespoons of water to one tablespoon of ground flax seed. For applesauce and mashed bananas: use one quarter cup to substitute for one egg.
6. Sometimes it's fun to try new things from other countries. Which of these Italian cookies is known for its anise flavoring?

Answer: Pizzelle

A pizzelle is a waffle cookie usually flavored with anise. But vanilla or lemon zest can also be used. It is popular around Christmas and Easter. And if it is still warm it can be rolled up and used as a cannoli shell.
7. It is said that two are better than one. Which type of cookie is actually two cookies with a layer of jam in between?

Answer: Linzer cookie

Linzer cookies look just as good as they taste, having a powered sugar top and a little heart or circle cutout to see the jam. The cookie is usually almond flavored with raspberry jam but any flavor of jam can be used.
8. Holidays are a great time for baking. Speculaas are thin, crunchy, shortbread cookies traditionally baked for which holiday?

Answer: Christmas

Speculaas are baked around Christmas time in Germany and are not usually found the rest of the year. They are also baked for St. Nicholas's feast in early December in Belgium and the Netherlands.
9. Once again you might not have all the ingredients when baking. What can be used to substitute for brown sugar?

Answer: white sugar and molasses

You can also substitute with confectioner's sugar if brown sugar isn't on hand. Or maybe you have it and it's just rock hard, in which case a slice of bread or a terra cotta disk can help keep it soft. And if you don't have molasses you can always substitute that with maple syrup.
10. Cookies and milk together are a classic, but let's take it a step further. If you add heavy cream, vanilla, and sugar to the milk and freeze it, what delicious cookie treat do you get?

Answer: Ice cream cookie

Ice cream cookies are very similar to ice cream sandwiches. Just bake whatever cookie recipe you have, traditionally chocolate chip is used. Then scoop your favorite ice cream, homemade or store bought, in between two cookies and there you have it.
