Similar but different is the only way to describe this culinary delight that adorns the Christmas buffet. Christmas cake is a fruit cake that is eaten either with or without icing. Christmas pudding or sometimes called plum pudding is served hot smothered in cream, ice cream or custard. I am definitely the cream and custard person.

For The Author's Kitchen, four ingredients for a Christmas pudding would be: mixed fruit, orange juice, self raising flour and mixed spice.

There are quite a variety of banana pudding recipes, both cooked and uncooked, with or without vanilla wafers. Generally all recipes contain bananas, of course, vanilla pudding mix or flour and vanilla to make your own, milk and eggs. An added bonus with banana pudding is that you can serve it chilled or hot, and then the big decision is what to put on it as a topping.

Answer: Pineapple

Should we enter into an argument whether pineapple is an ingredient on a pizza? No, we are talking desserts. Probably more recognisable is the pineapple upside down cake but here we are talking about pineapple pudding. A combination of flour, sugar, vanilla and pineapple pieces make a hot pudding. Of course, then the decision is whether to top it off with cream or ice cream.

Answer: Toffee

Toffee it is. Toffee is probably better known as being pulled or covered in chocolate and eaten as a sweet or candy, whereas in this pudding it is a hot, melted toffee sauce poured over the top of a flour based pudding filled with dates. The sumptuous dessert is either called sticky toffee or sticky date pudding dessert. No question for me, it is then smothered in cream.

Answer: Tiramisu

Tiramisu is a yummy Italian coffee dessert that is pretty easy to make. All you need is lady fingers biscuits (also known as Pavesini or Savoiardi biscuits), mascarpone, coffee and Frangelico (or other liquor, such as Kahlua). Tiramisu in English means 'pick me up' or 'cheer me up' which is a pretty good description of how eating it makes you feel.

Yorkshire pudding is a favourite in the UK with the Sunday roast beef. It is a baked pudding made from batter using eggs, flour, and milk. In my opinion it is pretty bland, but with a glorious dollop of gravy it is heaven. Makes a perfect side dish to the good old roast beef (and do not forget the mustard).

The traditional wedding cake is fruit cake with elaborate almond icing, adorned with flowers, bride and groom and other oddities. For the modern weddings, a lot of alternatives have been done, of course, according to the preference of the bride (usually), such as profiteroles, chocolate mousse, mud cake - the list is endless. Whatever the cake the symbolism is to celebrate the union of the bride and groom.

Answer: Coconut

Coconut is a versatile ingredient in any dessert or main course. You can use the coconut milk or flesh in any number of ways. This fruit is used across Asia both the fruit itself and the leaves of the plant. A coconut pudding is rich in taste and uses milk, sugar, eggs, flour mixed together, usually served cold. If you have not tried coconut as a slice, or on a lammington, or in a pudding, you are really missing out.

Answer: Rice

There are so many varieties of rice pudding, both savoury and sweet. I remember as a child having boiled rice, sprinkled with sugar and covered with milk, as a dessert. I am sure this for some cultures would be considered unpalatable. Then there is sticky rice made into a dessert, with some using flavouring such as red bean and green tea. Whatever way it is eaten, it will always be cooked.

Answer: Bread and butter

A firm staple of the '70s in my home in Australia was the bread and butter pudding. Using layers of buttered bread (usually stale that was not going to be used elsewhere), throw in some raisins, and cover with custard. Bake in the oven. Then it was served hot with either more custard or some cream. If you haven't tried it, give it a go. It is simple and rather delicious.
