Sour cream is the best but it is not kosher to serve meat and dairy at the same meal. Potato will have to do. Also try chopped cucumber.

Its the jelly on gefilte fish. The best way to enjoy it is to take a napkin and wipe it off.

Chrain is grated horseradish. I like the red kind - with beets.

It doesn't contain dairy products. It is not kosher to eat milk and meat together and the Shabbos meal is usually meat. It basically takes the place of mashed potatoes.

No, not cheddar cheese - sweetened pot, farmer, or cottage cheese.
Try sweetened ricotta with a layer of apple butter.

The original meaning of schmaltz is rendered chicken fat. It made for some tasty, but less than healthy cooking. It was even used for baking.
They now make pareve schmaltz so you can watch your cholesterol.

I don't know how it came to be used in the sense of schmaltz herring.

I don't even want to think about it.
It is put up to cook slowly before the Sabbath begins on Friday evening and cooks until Saturday lunch. Heavy stuff. People love it, I have no clue why.
