Quiz Answer Key and Fun Facts
1. One delicious recipe is poached pears. Are they usually peeled before being cooked?

Answer: Yes

Poached pears are cooked using a wet heat method. This means that they are cooked in a liquid. They are typically peeled with the stem left on, then cooked in a mixture of water and lemon juice, or other liquid such as wine. The stem allows for an ease of handling while cooking and transferring them from the pan to the cooling dish. One easy way to make sure that they stand up while they cook is to cut a thin slice off the bottom to give them a flat surface to stand on.

They can be served warm or cold. Great recipes can be found all over internet cooking sites. One of my favourites is for poached pears with caramel sauce. Mmmmmm!
2. What fruit-based condiment is often served with pork chops or pork roast in North America?

Answer: Applesauce

Applesauce is an easy treat to make up in the kitchen with just a few ingredients. It can be canned, frozen, or stored in the fridge for a few days. Kids often like applesauce on its own, but it can be used as a topping for ice cream, pancakes, or other kid-friendly meals. Adults often use applesauce as a condiment for pork chops and pork roast. If sweet apples are used, applesauce can be made without sugar or other sweeteners.

Instead, simply add a bit of cinnamon for some flavour and let the apples stand on their own for the sweetness.
3. The next fruit can be purchased in cans of rings and chunks. Which tropical fruit appears in many chicken recipes?

Answer: Pineapples

Pineapples were originally from South America, but are now grown in many other places, including Southeast Asia and Hawaii. Pineapple chunks are delicious on pizza (seriously - you should try it if you haven't done so yet). Pineapples also have a wide range of uses in the kitchen.

They can be baked into cakes, added to stir fries, used in a marinade to tenderize steaks, or made into muffins. Pineapple is great with all kinds of meat because it has a tendency to tenderize things and bring out some great flavours, but it is very commonly cooked with chicken in dishes such as Sticky Pineapple Chicken, Pineapple Chicken Casserole, Jamaican Pineapple Chicken, and many others.

It seems that many of the pineapple chicken recipes also have rice as an ingredient.

There are a lot of recipes online if you are interested.
4. This tart vegetable is often mistaken for a fruit. Which somewhat sour vegetable is often combined with fruit in dessert recipes?

Answer: Rhubarb

Rhubarb is a vegetable that is sometimes mistaken for a fruit because it is used in recipes more like a fruit. It requires cold winters to grow, so can be found in gardens that experience freezing temperatures in the winter. The large leaves of the plant are poisonous, so must be discarded before being used.

The celery-like stalks can then be stewed with sugar, or baked into muffins, cakes, or other desserts either alone, or with fruit. One of my favourites was my grandmother's strawberry-rhubarb crisp. If you find that intriguing, I encourage you to search for a recipe.
5. Fresh strawberries can be used in a number of ways in the kitchen. What type of salad is a common way to use them in appetizers?

Answer: Spinach salads

Strawberry-spinach salads are delicious. They are typically made with simple ingredients like spinach, strawberries, sliced almonds, a light dressing, and sometimes a cheese or other ingredients such as avocado. They are a very colourful salad. Besides being healthy and delicious, they can also be a great way to get kids to eat some spinach because the strawberries are sweet and distract them from the green leaves.
6. Key lime pie is another delicious way to bring fruit into your cooking. Which of the following is NOT true about the key limes you will find in the grocery store?

Answer: Key limes are slightly larger than most other limes.

Key limes are actually smaller than most other limes. In order to make a delicious key lime pie, it will take lots of work with your juicer or your squeezer to get enough juice for the pie because they are so small. Most key lime pie recipes use a graham cracker crust, but there are some variations online. Regarding the other options in this question, key limes are grown in many areas of the world and are commonly known as Mexican or West Indian limes.

They contain more seeds, and have a yellower skin than other limes. Key limes used to be grown in the Florida Keys until a hurricane killed off many of the groves in the 1920s.

At that point, most farmers replaced them with the larger, seedless Persian limes that are found more often in grocery stores now.
7. What type of fruit salsa, commonly used in Mexican cooking, is NOT tomato based?

Answer: Mango salsa

Mango salsa is a delightful condiment that you can quickly make with a few ingredients. It tastes great with just about anything that is Mexican or other spicy food such as Indian curries. You can eat it as a dip with nacho chips, or as a topping on burrito bowls or tacos. Mango salsa is also a delicious side condiment with chicken and salmon dishes.

There are many recipes, so if this is something that might interest you, I encourage you to do some searching online.
8. Banana bread recipes never have nuts listed in the ingredients.

Answer: False

Banana bread is a wonderful way to use up those bananas that are left a bit too long before you get a chance to eat them. Even bananas that turn quite brown can be used in banana bread recipes. One way to keep them for future banana breads is to take overripe bananas and toss them in the freezer.

Then, when you have enough, take them all out, thaw, peel, and use in your recipe. Many banana bread recipes will have nuts on the ingredients list. Most common is likely walnuts, but pecans, peanuts, and other nuts can be used. Even if the recipe that you use doesn't call for nuts, you can toss in a few to change the flavour a bit. Spreading a little peanut butter on a slice is delicious. Mmmmm!
9. When roasting stone fruits, is salt sometimes recommended to enhance their flavour?

Answer: Yes

Most of the stone fruits such as cherries, apricots, peaches, and nectarines can be roasted and used as a topping for desserts, pancakes, yogurt, or even added to cocktails. Roasting is a simple way to cook these fruits. Larger fruit such as peaches should be pitted, but smaller fruit like cherries can be roasted whole. Most recipes suggest baking the fruit with some liquid and sweetener, and adding a bit of salt. Once they are roasted, you won't taste the salt in the fruit, but it does serve to enhance the flavour of the roasted delights.
10. What is something that you can make with most fruit that keeps in your cupboard for a while?

Answer: Jam or jelly

Jam or jelly is a fun way to make the flavours last. You can find recipes online for most fruits or fruit combinations. When canned properly, jams and jellies will last for months in the pantry. Marmalade is another thing that you can make with your fruit that will last well when canned. On the other hand, although all of the other options can be made with fruit, they should not be left on the shelf in your pantry or they will spoil (some, such as smoothies, quicker than others).
