1. If you were offered escolar, would you expect to receive bread, wine, cheese, or something else entirely?

Answer: Other

An escolar is actually a fish, sometimes called a snake mackerel, and found all over the world. Although it is eaten, often under the name white tuna, over consumption can cause a rather unpleasant digestive upset known as steatorrhea. Because it is very difficult to identify as escolar once it is prepared, the fish is actually banned in several countries around the world, to prevent outbreaks of gastric illness.

Answer: Cheese

Caravane cheese is made from the milk of camels. It is not widely available outside Mauritius where it originates, mainly because camels' milk products are so rarely made that food safety and health organisations have yet to "catch up" and issue the necessary certifications that would allow it to be sold in more places.

Flower of Rajya is a dry cured cheese made in Tibet, from yak milk. Traditionally it is made in copper pots, and cured with Tibetan red salt to give it a distinct flavour.

Laxoox, also known as lahoh or injera, is a flatbread common to the eastern horn of Africa and parts of Arabia. True injera is made from teff flour, and laxoox uses sorghum flour. The breads are cooked flat, and have a spongy texture. Injera is often used as a 'spoon' to eat stew or casserole with, often from a large communal serving dish.

Founded by Louis Ladurée, Ladurée of Paris are particularly famous for their macarons, and have made them to the same recipe since the 1860s.

Zopf is a Swiss bread, made traditionally in the shape of a plait, rather like the Jewish challah. The word zopf translates into English as "braid".

Boğazkere is both the grape and the wine made from it. It is a Turkish red grape, named for a vineyard in the south of the country. It produces a full bodied wine, and 'those who know such things' say it goes very well with red meat or strong cheeses :-)

The name vranac literally translates as "black stallion", and vranac wine is known for its strong, distinctive flavour, and potency.

Grumichama trees grow in Brazil, and the fruits are rather like small cherries. The trees are classed as an endangered species as their habitat range is very small, and they are very slow growing. The wood has often been used for woodworking, which has exacerbated their decline. Grumichana wine is actually made.

Answer: Cheese

Xynotyri cheese is made from either goat or ewe's milk, and traditionally matured in animal skin bags or reed baskets. It is unpasteurised, and the name translates from the Greek as "sour cheese". It is known for its pungent aroma and distinctive "yoghurty" sweet-sour taste.
