The King and Queen are tired of Fiona being locked up in the tower, a princess by day and a ogress by night. They are willing to sacrifice anything to have her curse lifted. At one point the King hesitates before signing the contract, obviously unsure as to whether this is the right thing to do. With feigned casualness, Rumpelstiltskin asks him if his kingdom is more important than his daughter.

The King replies that nothing is more important than his daughter and starts to sign with new resolve.

A messenger bursts in to tell them that the Princess has been rescued, saving the King from having to sign. John Cleese and Julie Andrews provide the voices for the King and Queen and Walt Dohrn voices Rumpelstiltskin.

Answer: the birthday of their children

By this point in time, Shrek is starting to feel overly domestic and very much un-ogre like. His home is on a coach tour where the tour guide talks about how people used to be afraid of him. People ask him to autograph their pitchforks, which they once used to try and chase him away.
At the party an annoying child keeps pushing Shrek to "do the roar" and when Shrek finally does, people laugh and applaud rather than show fear. The birthday party has a cake (which the three pigs eat) that has a cartoonish picture of an ogre on it, which also offends Shrek. After the pigs eat the cake, Puss in Boots finds a second one. This angers Shrek and he smashes it. Fiona tries to talk to him but isn't terribly sympathetic about his attitude on their children's birthday.

Answer: the day Shrek was born

Rumpelstiltskin tells Shrek that he has to give him a day in exchange and casually suggests a day from Shrek's childhood. Shrek agrees and signs the contract. He later learns that because Rumpelstiltskin took the day he was born, once his one day of freedom is over, he will cease to exist, because he was never born.

It also means that because Shrek wasn't there to rescue Fiona from the tower, the king and queen did sign the kingdom over to Rumplestiltskin and it was a far different world than the one he knew.

Rumpelstiltskin has declared war on ogres (because he is really searching for Shrek) and has enlisted the assistance of witches to capture them. Shrek is captured and finds himself in a cage on a wagon, being pulled by Donkey. The witches who have captured him are taking him to Rumpelstiltskin. When Shrek escapes from Rumpelstiltskin, by stealing a broom, he takes Donkey with him.
Because Shrek has never been born. Donkey does not remember him. Shrek tries to win him over, by telling him all about what his life had been like, including his marriage to Dragon and his little mutant babies. Donkey is intrigued by this.

Answer: his wig

Rumpelstiltskin is heard to request a different wig for a couple of reasons, including for the making of a proclamation (this one looks like something that a British Lord would wear). His angry wig, which he also demands, is red and long, and makes him look like a troll, one of those small dolls that were popular in the '60s. Dragon, as a servant of Rumpelstiltskin, can be seen putting a wig on him.

Answer: that there is always an escape clause

In the original Rumpelstiltskin fairy tale, the escape clause was learning his name. Since that has become common knowledge in the movie, different escape clauses are used. Donkey shows Shrek that folding the contract a certain way reveals the escape clause.

However Donkey folds it wrong and comes up with an escape clause that doesn't make sense. Shrek is able to fiddle with the folding and come up with true love's kiss as his escape clause.

Answer: leading a band of rebel ogres

Because Shrek was not around to rescue her, Fiona broke herself out of the tower. Lacking true love's kiss, her curse has not been broken, so she is still a princess by day and an ogress by night. However in this reality, she seems to be more in touch with her ogre side and is very militant about bringing an end to Rumpelstiltskin's reign of terror over ogres.
Shrek joins her band and tries to convince her that he is her true love, but she doesn't believe him. He finally talks her into kissing him, but because she does not love him, nothing happens.

Rumplestiltskin is desperate to find Shrek, to stop him from unravelling all he has created. He lets it be known that he (Rumpelstiltskin) is going to be leading the nightly raiding party and the band of ogres, led by Fiona, become determined to ambush him.

However Rumpelstiltskin is not there, but the Pied Piper is (disguised in a giant duck suit). He has his pipe set for ogres and compels them to dance their way to the castle, where Rumpelstiltskin takes them prisoner.

Because Shrek has told Donkey that Dragon is his wife, Donkey is not frightened of her. They come nose to nose and Donkey seems smitten. Then she opens her mouth and takes him in her mouth. Puss in Boots sticks his sword into her neck, causing her to release Donkey, who yells "I'll call you." as they pull away on a broom.

Rumpelstiltskin has offered a special contract of wish fulfillment to anyone who can bring Shrek in. Shrek himself collects on this contract, asking for the release of all other ogres as his wish. Rumpelstiltskin complies, but doesn't release Fiona because he says that she does not qualify, only being half ogre. Shrek's one day is just about up and he is beginning to disappear, because he never was born. Fiona kisses him and for a minute, it appears that she is too late.

Then Puss notices that Fiona is still an ogre, after the sun has come up and everyone realizes that love's true kiss has broken her curse, and his contract with Rumpelstiltskin. Shrek is returned to the birthday party, happy for the life he has.
