All the junior officers (third, fourth, fifth and sixth officer) have one stripe on the sleeves of their uniform (or as shoulder-strap on their long jacket). The second officer has one stripe and a little circle, the first officer has two stripes and a little circle, the chief officer has three stripes and a little circle and the captain (who's the first in command) has four stripes and a little circle.
2. Who has to enter the time of the collision in the log?

Answer: Sixth Officer Moody

First Officer Murdoch gives the order: "Note the time and enter it in the log." You can only see the officer, who has to carry out the order, from his back. But earlier in the movie, you saw that there was only one officer together with Murdoch. This officer answered the phone, just before the collision occured. And in this scene, you can see the officer's face. We recognize him as Sixth Officer Moody.
3. Give the last name of the officer who says this line in the movie: "I don't think I've ever seen such a flat calm."

Answer: Lightoller

This line is said by Second Officer Lightoller in his conversation with Captain Smith. The conversation begins like this:

(Smith) "Clear."

(Lightoller) "Yes. I don't think I've ever seen such a flat calm."

(Smith) "Like a millpond. Not a breath of wind."

(Lightoller) "It will make the bergs harder to see with no breaking water at the base."

(Smith) After a few seconds thinking: "Well, I'm off. Maintain speed and heading, Mr. Lightoller."

(Lightoller) "Yes, sir."

Both of these officers have one stripe, so they have to be junior officers. Their faces tell you who they are: Fifth Officer Lowe and Sixth Officer Moody. After their little chat, Lowe leaves the bridge, while Moody enters the wheelhouse.
5. Three of these quotes are said by Fourth Officer Boxhall. Which one is NOT said by this officer?

Answer: "Very good, sir."

The quote "Very good, sir." is only said by Sixth Officer Moody, when he gets the order "All ahead full, Mr. Moody!" from First Officer Murdoch. This scene is situated in the beginning of the movie, when they "were steaming west from the coast of Ireland, with nothing out ahead of them but ocean" (quote from the old Rose).

The quote "Aye, sir" is said by Boxhall when the captain orders him to stop the engines (just after the collision).

The quote "Bloody pull faster, and pull!" is also said by Boxhall, when he stands in his lifeboat (when the stern of Titanic is rising up).

Sixth Officer Moody stands a little bit further away, at a modest distance.

You can always recognize the officers according to their stripes. This officer has three stripes, so he has a high rank. If you know that the first officer has two stripes, the chief officer has three stripes. Another way to find out: The captain has four stripes, so the officer with one stripe less, must be the chief officer.

First Officer Murdoch is on watch at the time of the collision, so it's logical that he's the one to give the orders "Hard to starboard" and "Hard to port". But there was also another officer, Sixth Officer Moody who answered the phone from lookout Fleet: "Is there anyone there?"

Moody: "Yes, what do you see?"

Fleet: "Iceberg, right ahead!"

Moody: "Thank you."

After reporting this message to the first officer, he also repeated the order "Hard to starboard" (and after the ship hit the iceberg, also the order "Hard to port").

Second Officer Lightoller is in charge of the lifeboats on the port side of the sinking vessel. As mentioned in the question, Lifeboat No. 6 is situated on the port side (all the lifeboats had an even number on the port side, the lifeboats on the starboard side had an odd number). You can also see him in a few scenes at this boat (before Rose, Ruth and Cal were on the boatdeck). And you can hear his voice, when this lifeboat is lowered (Ruth is also screaming for Rose to come back).

It's Chief Officer Wilde who leads Rose in the boat. He's also saying: "Step aboard, miss. Step aboard, please. Step lightly." You can also know this, because this officer also gives the order to lower the boat. Second Officer Lightoller is also standing with this boat, but is almost not seen in the scene where Rose gets into the boat. I'm not quite sure which boat it is: it could be Lifeboat #2 or Collapsible Lifeboat D.

It's actually quite difficult to recognize Chief Officer Wilde in this scenes, but when you look at the sleeve of his uniform, you can see that he has three stripes. So, through this way, you can know that it is the chief officer.
14. Fifth Officer Lowe returns to the place of the sinking to pick up survivors (supposing that there are still survivors). Before he does this, he asks volunteers to join him. How many volunteers can he gather?

Answer: 7

There are four men who are rowing and three men in the front of the boat who have to check the people in the water, to see if they are still alive. So that makes seven men in total. Officer Lowe had to shine with his pocket-lantern and call for possible survivors. According to Rose, he helps six people (including Rose) out of the water.

Historically, this isn't correct. He saves only 4 men, and one of these men even dies in the lifeboat.
15. Can we know from the movie that Lightoller survives the sinking?

Answer: No

If you know the history of Titanic, you will know that Second Officer Lightoller survives the sinking. But if you only know the movie, you can't make this out. The last scene where you can see Lightoller is where he hangs on top of the overturned Collapsible Lifeboat B. So you can't be sure that he will survive, because many men on this lifeboat died (they had hypothermia).
16. "Yes, sir" was the first line spoken in the movie by which officer?

Answer: Murdoch

When Captain Smith comes to the bridge and says: "Take her to sea, Mr. Murdoch. Let's stretch her legs", First Officer Murdoch replies with "Yes, sir". This is the first time in the movie, when we see the captain and Murdoch, so the first line really spoken by Murdoch. Earlier in the movie, we just hear the voice of Murdoch (this isn't the first line he says).

Thomas Andrews, the designer of Titanic, is talking to Second Officer Lightoller about the bad filling of the lifeboats: "Mr. Lightoller! Why are the lifeboats being launched half full?

(Andrews) "There. Look. Twenty or so in a boat built for 65? And I saw one boat with only 12. Twelve!" (He's talking about lifeboat #1 which had indeed only 12 people in it; though this lifeboat didn't have a capacity of 65, the boat could hold only 40 people.)

(Lightoller) "Well, we weren't sure of the weight, Mr. Andrews. These boats may buckle."

(Andrews) "Rubbish. They were tested in Belfast with the weight of 70 men. Now, fill these boats, Mr. Lightoller, for God's sake, man!"

Lightoller turns round and looks to a lifeboat which is already lowered. He understands that he has to fill the lifeboats better and says: "Please. I need more women and children, please."

Answer: There are three officers: Murdoch, Wilde and Moody

Of course there is First Officer Murdoch: he shoots at two passengers (under which Tommy, a friend of Jack and Fabrizio) and then commits suicide. Chief Officer Wilde allows Cal (Hockley) and his crying girl on the lifeboat. Second Officer Lightoller stands on the other side of the ship with Collapsible Lifeboat B, which is overturned. Fourth Officer Boxhall isn't present anymore at that stage of the sinking (he left in lifeboat 2 on the port side of the ship). Sixth Officer Moody is also standing with collapsible A; he doesn't have a particular role in these scenes, but he can be seen a few times, so we know that he's there.

Answer: Murdoch

This quote is said by Captain Smith, when he comes into the wheelhouse after the ship struck the iceberg. The officer of the watch was First Officer Murdoch, who replied: "An iceberg, sir. I put her hard to starboard and ran the engines full astern, but it was too close. I tried to port 'round it but she hit". Captain Smith gives the order to close the watertight doors, but they were already closed by Murdoch. Smith then runs out of the wheelhouse to see if the iceberg was still in sight.

This is said in the conversation between Captain Smith and Bruce Ismay (the President of the White Star Line, the shipping company that owned the Titanic). Ismay was trying to persuade the captain into the increasing of the speed of Titanic. At the end of the conversation he says: "Retire with a bang. Eh, E.J.?" This line tells you that the voyage of Titanic the last trip of Captain Smith was.
