You are able to ride in a helicopter, but not actually fly it. You see a school bus and the pick-up truck in the beginning when your in Ed's helicopter. You are able to drive the military jeep in two different places. If you kill the convicts, you can drive theirs with a dead convict in the back. You can also do this in the short time you steal it out of the tunnel from the special forces in overtime mode...before eventually switching to the 50 cal.

There are the hunting knives and cleavers, yet you never use a pocket knife in this game. You would almost suspect that a pocket knife would be in Ripper's Blades.
