There are two soldiers that are immediately knocked out after leaving the train. You can also extract two potions. You can get two potions from one soldier or one from each.

2. What is the first Summon materia that you acquire?

Answer: Choco/Mog

You acquire Choco/Mog at the Chocobo Ranch after talking to the Chocobo closest to the fence.

Ramuh is acquired at the Chocobo Racing Room.
Titan is acquired in Gongaga.
Ifrit is acquired after fight Jenova BIRTH.

3. What is the name of the attack when you summon Bahamut?

Answer: Mega Flare

Neo Bahamut attacks with Giga Flare and Bahamut Zero attacks with Tera Flare. Ultra Flare doesn't exist.
