It is impossible to answer this question *for certain* because of the way some of the myths are confusing or simply conflict with one another.

But, here's as complete a rundown as I could find, and it suggests the number could be over 100 children. It is a great link because it lays out all of the potential offspring, and explains why so many of them are contested or uncertain:

Another source lists Zeus' offspring with:

Metis
Offspring: Horai (Dike [justice], Eirene [peace], Eunomia [lawful government]), Moirai.

Eurynome
Offspring: Charites (Aglaia, Euphrosyne, Thalia).

Mnemosyne
Offspring: The Muses (Kleio, Euterpe, Thaleia, Melpomene,
Terpsichore, Erato, Polymnia, Ourania, Kallioe).

Hera
Offspring: Ares, Hebe, Eileithuia, [Hephaistos?])

Demeter
Offspring: Persephone.

Leto
Offspring: Artemis and Apollo.

Maia (daughter of Atlas)
Offspring: Hermes.

Another states that Zeus' Children were: Apollo, Ares, Artemis, Athena, Dionysus, Arcas, Amphion, Zethus, Britomartis, Polydeuces, Minos, Rhadamanthys, Sarpedon, Helen, Eileithyia, Hebe, Hephaestus.

Zeus had 54 children, 31 by Divine unions including The Three Graces: Aglaea, Euphrosyne, and Thalia; The Nine Muses: Calliope, Clio, Erato, Euterpe, Melpomene, Polyhymnia, Terpsichore, Thalia, and Urania; The Horae: First Generation - Auxo, Carpo, and Thallo, and Second Generation - Dike, Eirene, and Eunomia; The Morai: Atropos, Clotho, and Lachesis; and 23 by Human unions.
