The sheriff is looking at and addressing the prisoner, named Bobby Olson (played by Andrew Pine) when he says "Hello Bobby" at time mark 04:32. Then the sheriff turns his head towards towards Paladin and Paladin says "Hello Ernie, how are you?" To which the sheriff responds "Fine" and Paladin then says "Its a long time since Bull Run and Shiloh" So it does not appear the sheriff is calling Paladin "Bobby". Also it is interesting that Paladin uses the Union name "Bull Run" (Confederate name "First Manassas") for the one battle and the Confederate name "Shiloh" (Union name is "Pittsburg Landing") for the second battle he mentions. Normally, you would expect a Union soldier to consistently use the Union names and a Confederate soldier to consistently use the Confederate names.
