Suarez is of germanic origin. It is a patronomic name - Son of Suero. Suero = sug hari whey which means blood, race, and family. Originated in northern Spain. In the 400's A.D. German tribes began to invade Spain. The main one was the Visigoths and they settled in the central regions of Spain. However, there were smaller tribes that settled elsewhere. One of them were the Suevis, who settled in northern Spain. I do not know if they have anything to do with the origin of our name.
