I was checking Merriam Webster dictionary and all it said was someone with a rigorous religious code. However in 2 different areas I found it came from Nova Scotia
It is Latin for "New Scotland". One meaning of "bluenose" is someone who is prudish, prim and too proper, and the term was applied to Scottish Presbyterians whose religion was once very restrictive, prudish and austere. Eventually, people from Nova Scotia embraced the nickname with great pride, turning it from a negative appellation to a positive one.
I had known about the fishing/racing schooner the "Bluenose" from Nova Scotia. I have seen the replacement replica sail in a race off the coast of Gloucester, Massachusetts. In searching for information about the boat, I came across why it was christened with that name. That does not mean the other replies of folks who carry that appellation are incorrect. The schooner is just the source that raised the question.

As a Nova Scotian , and a proud "Bluenoser" I can tell you the popular theories of where the name "Bluenoser" originated.
#1 from the blue potatoes grown in Nova Scotia
#2 from the very cold winters (causing "blue" noses)
#3 from the mittens that the fishermen wore out at sea. These mittens, dyed blue, would have used by the fishermen to wipe at their faces (runny noses and watering eyes) while out on the cold Atlantic. The dye would run and leave blue colouring on the face....hence, blue noses.
The famous schooner, the "Bluenose" , built in Nova Scotia, is depicted on the back of the candian dime.
Please note that we call ourselves "Bluenosers" and not "Bluenoses"!
Nother source of bluestains at sea for fishermen is from the bait they use, squid.
