Valentine's Day is named after St. Valentine, a Christian priest who lived in Rome in the third century. The emperor at the time, Claudius II, banned marriage for young men, since the military was made up of young men, and Claudius believed they would be better soldiers if they felt they didn't have anything to lose by dying in war. This wouldn't be possible if the soldiers were married. St. Valentine believed this to be unfair, so if a young couple wanted to be married, he would marry them. This led to his imprisonment and eventual death. His final letter was a card that read "From your Valentine XO" addressed to his jailer's daughter, with whom he fell in love. Some people have claimed that the XO stood for Jesus Christ. (X being Christ and O being Jesus.) The date of his death is believed to be February 14, 273A.D., which is why some (but not all) countries celebrate Valentine's Day on the 14th.

Valentine's Day originated as a holiday in the fifth century, and as time went on, the items associated with the holiday increased. Giving your spouse a card is one of the most common things to do. Spouses also receive gifts from their significant other, such as flowers and chocolate as well as a special dinner, either eating out at a fancy restaurant or having a candlelit dinner for two. Candy, especially the conversation hearts, is also common.
The dove represents characteristics such as love, romance, and loyalty, and this has been the case for many centuries, which is why doves are also associated with Valentine's Day.
Like many holidays, there are colors associated with Valentine's Day. For this particular holiday, the colors are red, white, and pink. Red has been associated with love. White represents purity, as in being faithful to your spouse. When you combine the two colors, you get pink.
