Quiz Answer Key and Fun Facts
1. We all know that peppers come in various shapes and sizes as well as mild or hot. Which one of these is the hottest?

Answer: Scotch Bonnet

The Scotch Bonnet is the same species and is often compared to the Habanero. The intensity of a pepper is measured in Scoville heat units (SHU). In order to determine the SHU of a pepper, the chilli extract is diluted in water. The amount of times this is done for the pepper to lose its heat is what its particular SHU will be.

The higher the number, the hotter the pepper will be. A typical bell pepper ranks at 0 SHU. The Scotch Bonnet ranks in at 100,000-350,000 SHU, Jalepenos rank at 2,500-8,000 SHU, Cayenne at 30,000-50,000, and Banana Peppers are 0-500. Add Scotch Bonnet to your freshly made salsa and see what happens.
2. If you were to sauté some garlic in a generous amount of butter and then add a member of the mollusca family, what are you most likely preparing?

Answer: Escargot

Escargot is French for snails and has been a classic in french cuisine for hundreds of years. Other members of the mollusca family are cuttlefish, slugs, octopus, squid, and scallops.
3. Truffles are one of the most expensive ingredients in fine dining restaurants around the world. Known for their extra pungency, which one of these is the most expensive and sought after?

Answer: White Truffle

The white truffle has a price range of $1000-$2000 per pound. A white truffle weighing 1.5 kilograms actually sold at auction for $330,000. They are served raw and are normally shaved over a buttered pasta or in a pate. The flavour is unlike anything else, very earthy. In the world of elite, culinary greatness, these rare beauties are a definite must.
4. Yet another classic from the french is Foie Gras which when translated means "fat liver". This delicacy comes from two different birds that have been gavaged, which means "force fed". What are these two unfortunate birds?

Answer: Ducks and Geese

Gavaging involves the incredible ingestion of corn. With no time to process the huge amount the birds' livers expand dramatically. The ancient Egyptians started this around 2500 BCE when they started using birds for food. Foie gras is velvety, buttery, and simply melts in your mouth.
5. Which one of these extremely poisonous/venomous creatures is considered a delicacy in Japan?

Answer: Pufferfish

Because of the lethal toxicity of this fish, only specially licenced chefs are allowed to prepare and sell pufferfish to the public. Eating the ovaries and liver is forbidden because of the levels of poison, but these parts are considered the most delicious by some gourmets.

There is no antidote for this poison and it is not surprising that every year there are a number of fatalities due to this particular dinner.
6. The next and somewhat addicting food we will discuss is Caviar. What creature does TRUE Caviar come from?

Answer: Sturgeon

Just add Vodka as the Russians are famous for. The sturgeon has been around for 200 million years and is coveted for its roe. The species of Beluga Sturgeon reigns supreme among the caviar aficionados, although there are more than 20 species out there.

They are mainly harvested from the Caspian Sea and are normally 7-12 feet in length but is not uncommon to find one that is 18 feet long. They live to be over 100 years. Other non-sturgeon caviars come from lumpfish or whitefish.
7. In the elite culinary world you can find examples of the Thymus and Pancreas. These glands are normally breaded and pan fried with a rich mushroom and brown sauce. What are we talking about here?

Answer: Sweet Breads

If you like game meat then this is for you. Primarily the calf or lamb is used with the occasional beef or pork. This dish needs a robust Syrah and a very strong stomach.
8. This is arguably the most controversial item on the menu. Which item has led to over-hunting and borderline cruelty?

Answer: Monkey Brains

This has long been associated with China and Indonesia. In these countries it is believed that eating monkey brains can cure impotence. Anyone who has seen Indiana Jones and the Temple of Doom will recall the wonderful dinner that was served in the palace. An appetizer of rather large insects followed by "Snake Surprise" (python young), and finished with "Chilled Monkey Brains". Even I would have trouble with this one.
9. This is one of the best aphrodisiacs in the world. Yes, it is the raw oyster. Which one of these is a variety of oyster?

Answer: Malpeque

Malpeques are the most common in the world. Just add Tabasco with lemon and down the hatch.
10. What exactly is "Black Pudding"?

Answer: Sausage made by cooking blood until congealed

This entree is generally made from the blood of pork. It can be eaten raw but it is way better if it is grilled, fried, or boiled. The Brits know how to cook.
