In Europe, the original brewers of beer were women, called brewsters. They created a low-alcohol, high-nutrient concoction for their families that tended to be more sanitary than water. Norsemen (Vikings) especially preferred brewsters to make their öl (ale).

Märzenbier (March beer) is a traditional Bavarian lager served during Oktoberfest. Historically, because Bavarian law permitted the brewing of beer only between 29 September and 23 April, Märzenbier was brewed in spring and kept in the cellar to use during the dry period. Any remaining after September 29 was served at Oktoberfest, and so it's also called Festbier or Oktoberfestbier.

The 1516 'Reinheitsgebot' (Beer Purity Law) in Bavaria decreed that only barley, hops, yeast and water can be used to brew beer. It was slowly adopted through all Germany. Centuries later, the European Court of Justice determined in 1987 that the 'Reinheitsgebot' was protectionist and violated the Treaty of Rome, and could not apply to beer imported into Germany. Domestic German beer, however, still follows the Purity Law.
