1. What does "86 the chicken" mean?

Answer: We're out of the chicken.

"86" has other meanings, too. To "86" a customer from a restaurant or bar means to kick him or her out for good.
2. Why does Restaurant Worker A say "behind you" to Restaurant Worker B?

Answer: to warn B, whose back is turned, not to bump into A

Since restaurant workers carry hot plates and other dangerous stuff, and since they move around quickly, they have to continually warn each other about their whereabouts.
3. What is a "deuce" in restaurant lingo?

Answer: a table for two

In a waitress's station she might have four deuces, two four-tops, and a six-top.
4. What is a pocket ticket?

Answer: an order that a waiter has forgotten to turn in to the kitchen

If a waiter realizes that he/she has a pocket ticket, he/she must beg the cooks to put that order ahead of all the others so that the customer won't realize what has happened.
5. What does it mean to "bus tables"?

Answer: to clear them

Bus tubs are those big greasy plastic tubs that buspeople and waiters use to collect dirty dishes. Depending on the restaurant, buspeople may also set the table for the next customers; in other places this is done by the server taking the order or while serving the food.
6. What happens when a restaurant table "turns"?

Answer: One party leaves and another sits down.

Turning tables quickly is one way to make more tips.
7. What does "in the front" mean?

Answer: in the dining room

Waiters, bartenders, hosts, and bussers work in the front. Cooks and dishwashers work "in the back."

I once worked in a 24-hour coffee shop in which the side work (filling pans of salad dressing, restocking bread, cutting lemons, and so on) could take as long as an hour.
