1. Let's order some maguro. Maguro is generally found in any Japanese restaurant, and might also be called toro or akami. Which of these fish does that describe?

Answer: tuna

Until after World War II, tuna did not have the popularity that it does today. Folks did not think it tasted good and vendors would ferment it and smother it in soy sauce to mask the taste.
2. The next dish we order is sake, which of these will now come to our table?

Answer: salmon

Salmon is not a traditional sashimi, but Norway initiated Project Japan in 1980 and made a successful pitch to sell their salmon to Japan. This also increased exports to other sushi and sashimi markets, such as China and Singapore.

Answer: wasabi

Wasabia japonica is a delicate plant that grows in and around clear mountain streams. The stalks, leaves and flowers are also used in cooking, but the grated root is what provides the spicy kick.

Shōyu, or Japanese soy sauce, comes in different varieties. It is generally served in a small container as a dipping sauce and adds a salty flavor.
10. With some trepidation due to its poisonous nature, our next order is fugu. Which of these will be brought to the table?

Answer: pufferfish

The preparation of fugu in Japan requires several years of training and a certification because the poison paralyzes the muscles and has no antidote. However, many Japanese consider the fish a delicacy and prefer just a wee bit of the poison - enough to tingle their lips.
