Quiz Answer Key and Fun Facts
1. What is the name for a layered chocolate cake with whipped cream and cherries between each layer? The top is decorated with chocolate shavings and maraschino cherries.

Answer: Black Forest Gateau

Some traditional recipes specify sour cherries both between the layers and for the decoration on top. Either way this is one of my favorite cakes.
2. What is the name for a dense rich chocolate cake with a thin layer of apricot preserves on top, that is coated all over with dark chocolate icing and served with unsweetened whipped cream? Some versions may also have layers of apricot preserves between each layer.

Answer: Sacher Torte

This can also be spelled as just one word - Sachertorte. Whatever the spelling, it is a classic Austrian chocolate cake layered with apricot preserves.

The Hotel Sacher in Vienna claims that it has been the most famous cake in the world since 1832 and that their original recipe is still a closely guarded secret. Even if it is not exactly the same as that original recipe, this type of cake can still be described as a Sachertorte.
3. What do you call a cake filled with either custard or cream and then frosted with chocolate?

Answer: Boston Cream Pie

The Boston Cream Pie is really a cake, not a pie, but Boston Cream Pie has become the accepted name for this dessert. In 1996 it was declared to be the official Massachusetts State Dessert.

All the other options are desserts with cream, but none of them traditionally contain chocolate.
4. What do you call a layered chocolate cake that has a coconut-pecan frosting between the layers as well as on top?

Answer: German Chocolate Cake

One would have thought that the name of this cake had an obvious meaning. Surprisingly though this cake does not come from Germany, but is named after it's inventor, an American baker named Sam German. Originally it was called German's Chocolate Cake.
5. What do you call a finger-shaped cake made of choux pastry, filled with cream and iced with chocolate?

Answer: Chocolate Eclair

This dessert dates back to at least 1850 and probably evolved from earlier versions which were called Pain a la Duchesse or Petite Duchesse.

One possible translation of eclair is that it is a flash of lightning. That may refer to the shiny coating of chocolate, but it could also refer to how quickly I will make them disappear!
6. What do you call a sponge cake with 6 or 7 very thin layers that has chocolate butter cream between each layer and apricot jam on top? The whole cake is covered with a chocolate glaze.

Answer: Prinzregenten Torte

Named after 19th Century Bavarian Prince Regent Luitpold. Although it is known to have been created to honor the Prince Regent, there is some dispute about the name of the baker who was responsible for inventing this dessert.

Schwarzwald Torte is the German name for Black Forest Gateau.
7. What do you call a chocolate buttermilk layer cake that is filled with chocolate ganache between the layers and frosted with chocolate buttercream?

Answer: Joffre Cake

This cake has its origins at the Casa Capsa restaurant in Bucharest, Romania. It is said to have originally been made in honor of a visit by French Field Marshal Joseph Joffre shortly after World War 1.
8. An Afghan is a delicious chocolate biscuit with surprising origins in the South Pacific rather than Asia. What sort of nuts would you expect to find on top of your Afghan?

Answer: Walnuts

Most sources say this biscuit originated in New Zealand. There are some claims of an Australian connection.

The recipe for this biscuit was in the 1940 Edmonds Cookbook which is published in New Zealand. However it is not in the 1907 edition, so it was invented sometime in the early 20th century. The reason for it being called an Afghan is not known for sure and is the cause of some controversy. The most radical view is that the coloring of the biscuit is supposed to be the same as a native of Afghanistan and it is therefore a racist biscuit!

That particular explanation seems bizarre. Anyone who named a biscuit after someone's skin color would choose an ethnic group that was close at hand, not the inhabitants of a country halfway around the world.

Since nobody really knows the reason for the name, all you have to do is not worry about why it is called an Afghan and just enjoy your delicious biscuit.
9. You have condensed milk, powdered chocolate, butter and chocolate sprinkles. What Brazilian dessert can you make?

Answer: Brigadeiros

The Brigadeiro is such a popular dessert in Brazil that it might even be said to be a national icon. There are even specialist shops called Brigadeiro Boutiques that sell many different versions of this dessert.

The ingredients in the question will produce a simple treat of the sort that one might serve at a child's birthday party. However adding elements such as almonds, pistachios or hazelnuts can elevate this simple treat to a gourmet dessert.
10. Your have ordered a rich layer cake topped with either cream cheese or roux icing. What colorful name would be used to describe your dessert?

Answer: Red Velvet Cake

The red does not necessarily come from red food coloring, although that is the case in some recipes. Beet juice can also be used to provide both extra moisture as well as the coloring.
