Quiz Answer Key and Fun Facts
1. Doublemm decides muffins will be nice, but the recipe he has needs 2 cups of flour. How many fluid ounces does a standard (US) cup hold?

Answer: 8 fl oz

Just to help confuse Doublemm, not all cups are the same. A Canadian cup is equivalent to 8 fl oz (UK), but only 7.7 fl oz (US). A metric cup is equivalent to 8.5 fl oz (US) or 8.8 fl oz (UK).
2. Doublemm can't find a cup the right size, but he has some scales with ounces. How many ounces of flour are equivalent to a cup (US) of flour?

Answer: 4 oz

There are 16 ounces in a pound.
The flour needs to be stirred first, so it is loose and not tightly packed. The cup should be filled using a spoon, without packing or shaking, and levelled off with a palette knife.
3. The next ingredient is sultanas, will a cup of sultanas be the same weight as a cup of flour?

Answer: No

A cup is a volume measurement. This means a cup of a different ingredient will weigh a different amount if the density of the ingredient is different. A cup of sultanas (golden raisins) will weigh about 5.5 oz.
4. Doublemm has sorted his dry ingredients, but now he needs 6 tablespoons of butter. How many millilitres are in a tablespoon?

Answer: 15 ml

Of course, that's a metric tablespoon! Spoons are different on opposite sides of the Atlantic: a UK tablespoon is 14.2 ml and a US tablespoon is 14.8 ml.

5 ml is a teaspoon, and 10 ml is a dessertspoon.
5. After getting very messy trying to measure out a tablespoon of butter, Doublemm wonders if there's a easier way. How many ounces will one tablespoon of butter weigh?

Answer: 0.5 oz

So for 6 tbsp of butter Doublemm will need 3 oz of butter. To measure butter in a tablespoon it needs to be packed in, leaving no air spaces, levelled off and then all scooped out.
6. As Doublemm is wrapping up the remains of his butter he notices markings on the wrapper. Each division is marked as 2 oz, by what term is this amount also known as in the US?

Answer: half stick

Butter in the US often comes in a pound box, containing 4 sticks (so each stick is equal to 4 oz).
In the UK, butter typically comes in packs of 250g or 500g.
7. Doublemm realises he needs to pre-heat his oven. The recipe asks for 200C, which of these will give the right temperature for his (UK) gas oven?

Answer: Gas mark 6

Gas mark 2, 300F and 150C will all be too cool. If Doublemm had a fan oven instead, he'd need to reduce the 200C cooking temperature by 10C or so.
8. So, the muffins are in the oven. Doublemm wants a topping on them and has found a recipe which uses grams. How many grams are in an ounce?

Answer: 28.3 grams

Metric and Imperial measurements are certainly not the same.
Whilst the accurate conversion is just over 28 g per ounce, most recipes use 25 g per ounce as an approximation.
9. Doublemm decides a nice milkshake will help the muffins down. The recipe needs a pint of milk, is that the same measurement on both sides of the Atlantic?

Answer: No

A pint of milk in the UK is a larger volume than a pint of milk in the US. A pint in the UK contains 20 fl oz whereas in the US, it contains 16 fl oz.
10. Doublemm's friends arrive and marvel at his delicious muffins and milkshakes. What piece of advice will he NOT give them regarding units in baking?

Answer: Put in whatever amount you want.

Recipes have been tested before publishing and the quantities listed work. Using cups incorrectly, or mixing grams and ounces (without accurate conversion) may result in your baking attempt failing. Fortunately there are plenty of websites out there that help us convert units and allow us to use recipes with units we're unfamiliar with.
