Quiz Answer Key and Fun Facts
1. In which country is "spaghettieis" a favourite ice cream sundae?

Answer: Germany

Spaghettieis was invented in 1969 by Dario Fontanella, the son of an Italian immigrant who moved to Germany with his family. Two or three scoops of vanilla ice cream is pressed through a spatzlepresse, or ricer, until it resembles a mound of spaghetti. Added to this is strawberry sauce (which resembles tomato sauce) and topped with grated almonds, shredded coconut or grated white chocolate (resembling parmesan cheese).
2. Which ice cream from Alaska can be made by mixing together berries, fresh snow and reindeer fat?

Answer: Akutaq

Akutaq, or Eskimo ice cream, is a cold ice dessert which has been made by the indigenous people of Alaska for thousands of years. It was eaten on hunting trips, traditionally made by the womenfolk after the first catch, but also eaten during celebrations. Freshly fallen snow would be whipped to a light froth before adding fat from any animal they caught, including reindeer, caribou, seal, moose, fish or bear. Berries would be added for flavour.

Modern varieties include milk and sugar.
3. Which Indian ice cream is traditionally served in an earthenware dish called a matka?

Answer: Kulfi

Kulfi is made by simmering sweetened milk for hours until it caramelises, giving it a nutty flavour and chewy texture. The mixture is normally placed in cone shaped moulds and frozen in salt and ice. Matka kulfi is the name given to the same ice cream mixture traditionally served in an earthenware dish called a matki, or matka.

The dish provides additional insulation during the freezing process. Cardamom, rosewater, pistachio or mango is sometimes added to give further flavour to the frozen dessert.
4. Which of these is NOT an ice cream based dessert from Great Britain?

Answer: Eton mess

A "99" is a wafer cone with soft scoop ice cream and chocolate flake. A knickerbocker glory is a combination of layers of ice cream, fruit and whipped cream, topped with raspberry sauce and chopped hazelnuts, all served in a tall glass. An Arctic roll is a vanilla ice cream log wrapped in a thin layer of sponge cake and raspberry jam.

The only dessert out of the choices given without ice cream is Eton mess. This consists of whipped cream, meringue and strawberries, mixed together to make a mess.
5. Which Italian frozen dessert is halfway between an ice cream and a mousse?

Answer: Semifreddo

Semifreddo roughly translated into English means "half-cold". It is simply made by adding equal quantities of ice cream and whipped cream to make a fluffy mousse before freezing. It can then be sliced into servings. The texture is much lighter than ice cream and some people prefer to eat it after a heavy lunch.

The normal plethora of ice cream flavours can be used, including vanilla, chocolate, coffee and raspberry.
6. What type of texture does Turkish "dondurma" ice cream have?

Answer: Elastic and stretchy

Dondurma has been described as "stretchy as melted mozzarella" and "elastic ice cream". This sweetened milk based ice cream has the added ingredient of salep, a natural thickening agent taken from the tubers of various orchids. The mixture is pounded together until it becomes glutinous, similar to someone kneading bread dough to activate the gluten.

It is then chilled and the chewy ice cream is cut with a knife into servings.
7. The Persian iced dessert called "faloodeh" is made by using sugar syrup, rose-water and which other key ingredient?

Answer: Vermicelli noodles

Rice or corn starch vermicelli noodles are added to sugar syrup and rose-water before freezing. The finished product is a slightly slushy but refreshing dessert which is well received in the hot climes of the Middle East. It is believed to be one of the earliest known desserts in the world, dating back to roughly 400 BC.

The image shows the popular Persian dish, makhloot, a saffron based ice cream served on a bed of faloodeh.
8. Flavoured with green tea, vanilla, chocolate or adzuki bean, what is the name of the popular Japanese ice cream ball coated with sticky rice?

Answer: Mochi

A thin layer of dough made from rice flour and coated with cornstarch is placed around small balls of frozen ice cream to make this unusual dessert. When you bite into it, you first taste the slightly chewy outer layer before getting a burst of flavour from the cold ice cream inside.

This Japanese dessert is popular in Hawaii where it is made by specialty ice cream retailers, Bubbies. They manufacture over twenty different flavours of mochi, promising "great balls of...happiness!"
9. Sorbetes ice cream from the Philippines is traditionally made by using which ingredient?

Answer: Coconut milk

Sorbetes (not sorbets) is a traditional ice cream made in the Philippines using coconut milk, although commercial companies use animal milk. It is a popular street food, served by vendors called Sorbeteros, and locals have given it the unsavoury nickname of "dirty ice cream" due to the pollution in the air. Such is the ice cream's popularity that there is even a Tagalog song called Mamang Sorbetero, roughly translated as "Mr Ice Cream Man". It includes the lyrics:

"Mr Ice Cream Man, tell me your name
The ice cream you sell is making me insane;
Heat of life, you cast away with no sweat
Unhappiness, I do remember to forget.

Chorus:
Mr Ice Cream Man, c'mon let's dance
The bell you hold, give its wave a chance;
Little children waiting long for you
You give them joy this summer through.

Behold the clouds in the sky taking a peek
Shaped like an ice cream in heaven's cheek;
The eyes of a maiden, dreaming in the air
There is a secret her thoughts wouldn't bare.

Lips are hot and eyes are on fire
Love is burning, with pity she desire;
Mr Ice Cream Man, oh where are you now
The heat of life, cool it down somehow."
10. Created in Illinois in 1987, which American treat has been marketed as "the ice cream of the future"?

Answer: Dippin' Dots

Tiny droplets of ice cream are flash-frozen in liquid nitrogen to make small globules. Dippin' Dots first originated in 1987 but has since grown to become a major retailer, selling their confection at thousands of shopping centres, amusement parks, sporting stadiums and cinema theatres throughout the United States.

Their top selling flavour is Rainbow Ice, a combination of strawberry, lemon, lime, orange and blue raspberry.
