Answer: Gruyere cheese

The egg yolks are continuously whisked in a ceramic or glass vessel (a heatproof bowl works well) seated over a pan of simmering water to cook the yolks and warm the sauce GENTLY. While whisking, add pats of butter to melt into the yolks. Then flavor with lemon juice, salt, and white or cayenne pepper.

The result is a smooth, rich, buttery sauce that is heaven over vegetables or the key ingredient in Eggs Benedict. There is no cheese in this sauce.

Answer: Almonds

This dessert is not nuts! Although the recipe features raspberries, other seasonal berries or soft fruits could be used instead. Mash most of the fruit and sweeten, then gently fold into the stiffly whipped and sweetened cream. Garnish with a few reserved berries.

Although nuts don't feature in this dish, some nut cookies or biscotti make a nice accompaniment. The fool is especially nice in warm weather because it's light and refreshing.

The Reuben was invented sometime around the 1920's in either New York City or Omaha, Nebraska, depending on which legend you believe. This classic sandwich features corned beef, Swiss cheese, sauerkraut, and Russian (or 1000 Island) dressing grilled on rye bread.

Interestingly, there is a variation of this sandwich, called the Rachel, which features either pastrami or turkey in place of the corned beef, and coleslaw in place of the sauerkraut.

Succotash has a history that goes back in America to the earliest interactions of European settlers with Native Peoples. Legend has it as being on the menu for the first Thanksgiving dinner, where it is still popular today. Because it is economical in its basic form, succotash was very popular during the Great Depression.

It is, however, strictly a vegetable dish.

Hangtown Fry is part of the history of the state of California. The most widely-accepted story about its creation tells of a prospector in the California Gold Rush of the late 1840's-1850's who struck it rich and demanded the most expensive dish in the local eatery in Placerville, then called Hangtown.

In those days and at that location eggs, bacon, and oysters were hard to get and thus expensive; so Hangtown Fry was born. Described as an oyster and bacon omelette, preparation of the dish is simple: oysters, usually cut in bite-size pieces, are first fried, sometimes with the bacon, and then cooked with the beaten eggs. Sometimes the bacon is fried separately and crumbled over the egg-oyster mixture. Milk may be added to the egg mixture before cooking; and later versions may include spices, vegetables, and/or cheese, but the basic recipe of eggs, oysters, and bacon prevails.

Ganache is the ultimate foundation for many chocolate treats: candy, frosting/icing/glazes, fillings, and sauce. The heated cream is added to the chopped chocolate and stirred, often over the gentle heat of a double boiler, to combine. Other flavoring, in the form of liqueurs or extracts, may be added with or in place of the vanilla. Depending on the ratio of cream to chocolate, the mixture can be used as a basis for truffles or a candy shell; as a dip to glaze cupcakes; or whipped into a creamier frosting or filling for cakes or profiteroles. Whipping can infuse enough air into the mix that adding marshmallow creme is not necessary.

Developed in the Middle Ages as a way of preserving the apple crop, Apple Butter is basically caramelized applesauce, but cooked slowly over a long period to achieve its characteristic dark-brown color. Its name comes from its creamy, thick consistency, achieved through the long cooking, not because it contains actual butter in any significant amount. Recipes vary somewhat, but are alike in beginning with cooking down fresh apples, usually with a liquid which varies from water, vinegar, or lemon juice (these last to temper the sweetness of the concentrated apples). To this mixture is added a variety of sweeteners (sugar or honey) and spices (cinnamon, cloves, nutmeg, salt).

The resulting preparation is then cooked and stirred on low heat for several hours. Sometimes a slow cooker is used. Apple butter can be "canned" just like other jams and jellies.

Answer: Cream

Risotto is a classic Italian rice dish, with countless variations and possible additions, but the ingredients included in the basic recipe are simple. The preparation is also simple but requires time and patience. Arborio rice is chosen for its high starch content, which allows it to form a creamy sauce with the chicken stock without any actual cream.

The rice is first cooked in only melted butter in order to toast the grains and enable them to absorb the stock. Then the simmering stock is added slowly to the cooking rice by ladles-full, while stirring the rice mixture constantly over time.

As the stock is absorbed the rice releases its starches and forms a velvety sauce. White wine may also be added during this phase of the cooking, which takes about 30 minutes. Before serving, the Parmesan cheese is added, resulting in a luscious consistency.
