* 4 skinless, boneless chicken breast halves
* 1 (10.75 ounce) can condensed cream of chicken soup
* 2 (15 ounce) cans mixed vegetables, drained

DIRECTIONS

1. Boil or steam the chicken breasts until done. Dice.
2. Mix together undiluted soup, canned vegetables, and diced chicken. Pour mixture into pie shell, and cover with the second crust. Crimp the edges, and make slits in the top crust.

INGREDIENTS

* 3 cups rhubarb, cut into 1/2 inch pieces

* 1 (9 inch) graham cracker crust
* whole fresh strawberries

DIRECTIONS

1. In a saucepan, bring the rhubarb and water to a boil.
2. Remove from the heat, then add gelatin.

4. Once cooled, stir in sliced strawberries.
5. Chill until it begins to thicken.

INGREDIENTS

* 9 potatoes - peeled and cubed
* 1 1/2 pounds ground meat such as beef, lamb, pork or chicken
* 1 (6 ounce) can tomato sauce
* 2 tablespoons chopped fresh parsley
* 1 dash Worcestershire sauce
* 1/2 teaspoon salt
* 1/2 teaspoon ground black pepper
* 1 (10 ounce) can of corn, drained
* 1 (10 ounce) can of peas, drained
* 1 cup shredded carrots
* 2 tablespoons all-purpose flour
* 2 tablespoons milk

DIRECTIONS

1. Preheat oven to 350 degrees F (175 degrees C).
2. Place the potatoes in a large pot, cover with water and place over high heat. Boil for 15 minutes. While the potatoes boil, brown the ground beef in a large skillet over medium high heat and then drain the excess fat.
3. To the ground beef, add the tomato sauce, parsley, Worcestershire sauce to taste, salt, ground black pepper, carrots, corn and peas. In a separate small bowl, mix the flour with the 3 tablespoons of water and stir it into the beef mixture. Stir all together well. Place the meat and vegetable mixture into a 10 inch casserole dish.
4. Drain the potatoes and then mash them. Spread the potatoes over the beef and vegetable mixture Place 2 to 3 vent holes through the mashed potatoes to allow steam to escape.
5. Bake at 350 degrees F (175 degrees C) for 25 minutes. Brush the milk over the potatoes for the last 5 minutes of baking.

INGREDIENTS

* 1 (14.5 ounce) can pitted tart cherries
* 1 cup sugar
* 1/4 cup all-purpose flour
* 1 (8 ounce) can crushed pineapple, with the juice as well
* 1 (3 ounce) package cherry gelatin
* 10 drops red food coloring (optional)
* 3 medium firm bananas, sliced
* 1/2 cup chopped pecans
* 1 (9 inch) pastry shell, baked
* whipped topping

DIRECTIONS

1. Drain cherries, keeping 2 tablespoons of the juice (discard the remaining juice or save for another use).
2. In a large saucepan, combine sugar and flour.
3. Stir in the pineapple, cherries and the 2 tablespoons of juice.
4. Bring to a boil then lower the temperature to medium. Cook and stir for 2 minutes or until thickened.
5. Remove from the heat and add gelatin powder, stirring until dissolved.
6. Stir in food coloring if desired.
7. Cool until the filling is partially set.
8. Stir in bananas and pecans. Pour into the pie shell.
9. Refrigerate for about 3 to 4 hours before serving.
10. Decorate the top of the pie with whipped topping, if desired.

* 1 bay leaf

2. In a stew pot, brown the kidney and steak in hot fat. Add onions, seasonings, and 1 1/2 cups water. Simmer until meat is almost tender, about 1 to 1-1/2 hours.
3. Add potatoes and continue simmering until potatoes are tender, about 1/2 hour longer.
4. Blend together flour and remaining 1/2 cup water; stir into meat mixture. Continue cooking and stirring until mixture thickens. Pour into 3 quart casserole dish.
5. Roll out pastry slightly larger than the top of the casserole dish. Place over the meat mixture, and trim to overhang 1 inch. Fold under, and flute against inside edge of casserole. Cut several steam vents in center.
6. Bake at 425 degrees F (220 degrees C) until lightly browned, about 30 minutes.

* 2 cups raisins
* 2 cups water

* 1 tablespoon butter

French Pork pie (Tourtieres)

INGREDIENTS

* 2 1/2 pounds lean ground pork
* 1/4 teaspoon ground cloves
* 1/4 teaspoon ground cinnamon
* 1 large onion, chopped
* 1 teaspoon salt
* 1 stalk celery, chopped
* 1 bay leaf
* 3 cups water
* 4 baking potatoes, peeled and cubed
* 2 (15 ounce) packages refrigerated pie crusts

DIRECTIONS

1. In a large saucepan, mix together the ground pork, cloves, cinnamon, onion, salt, celery, bay leaf and water. The water will help to break up the raw pork. Simmer this mixture over medium-low heat for about 3 hours, or until the water has evaporated. Remove from the heat and discard the bay leaf.
2. Towards the end of the pork cooking time, place the potatoes into a separate saucepan and fill with enough water to cover. Bring to a boil and cook until tender, about 10 minutes. Drain and mash potatoes. When the pork is done, stir the mashed potatoes into that mixture until everything is evenly blended.
3. Preheat the oven to 375 degrees F (190 degrees C). Line two 9 inch pie plates with bottom crusts. Spoon equal amounts of the pork filling into each crust. Cover with top crusts and flute the edges to seal.
4. Bake for 45 minutes, in the preheated oven, or until crust is golden brown.
