Answer: dill pickle

I still prefer my dill pickle cold and not deep-fried, but...they were "interesting".
2. In a restaurant in Texas I decided I'd try their "special" appetizer called Texas Caviar. What is the basis of that special caviar?

Answer: black-eyed peas

Add some diced tomato, onion, green pepper, minced jalapeno, some vinegar and olive oil, along with some spices and voila! Texas Caviar. Hint: You don't have to start with the dried legume; canned works perfectly well.

Answer: vinegar

Mix vinegar, usually cider, a little cayenne and red pepper flakes, salt and pepper and you've got BBQ sauce. Some people put some brown sugar in it, too. Others add hot pepper sauce to it. No matter how it's made, it's now my favorite BBQ sauce for pork.
4. For my lunch in North Carolina I had pork with that wonderful BBQ sauce. What do they call their long-cooked, very tender, meaty pork?

Answer: pulled pork

Although it is usually slowly barbecued, the pulled pork can also be cooked in a slow cooker, as well as in the oven. Just slow and low, for a long, long time, so that with two forks one can pull it apart. Ropa Vieja, a Mexican dish, is also shredded, but it's made with beef.

Answer: cole slaw

I find the Southern slaw is more sweet than what I'm used to, but I now prefer it to what I was brought up eating. However good it is, though, I want nothing to interfere with my taste buds and that wonderful barbecued pulled pork. The first time the waitress asked if I wanted cole slaw I said "Yes". Now, whenever I'm asked, I say "On the side".

Sugar - and LOTS of it. I've been to places where they had nothing else BUT "sweet tea". Those times, I opted for water.

Lady fingers (or vanilla wafers) surround the bowl filled with vanilla pudding and sliced bananas. It goes very fast when it's brought out from the kitchen!

I LOVE this expression and use it with my grandchildren who live in the Northeast. They now speak one Southern phrase.

Although I enjoy the food at all the listed choices, the one I'm taking home tonight is one I often "rely" on when I don't feel like cooking. I adore Col. Sander's original recipe fried chicken, and really like his cole slaw, mashed potatoes and gravy. Even the biscuit is good! Incidentally, the company has changed its name to "KFC", but we're a little behind here in the South. We still think of it as either "Kentucky Fried Chicken" or "Col. Sander's".

I like peanuts; I'm not fond of the boiled peanuts. But, I'm not a Southerner by birth. I think that makes the difference.
