Answer: Pastries

You'll need to watch the movie to see exactly what happens, however to summarise...

The basket of pastries is delivered to the Delta Iota Kappa fraternity house where Richard and his friends tuck in. The guys are really enjoying them until they see Polaroids taken by Van in the bottom of the basket and the reality of what they are eating suddenly dawns on them.
2. How does Gwen manage to get Van's confidential student transcripts?

Answer: She sets off the fire sprinkler system which causes the archive guy to evacuate the archive room.

We see Gwen enter the archives area wearing the same yellow rain jacket Van gave her earlier and say to the archive guy, "I need to see the grade transcripts for Van Wilder, please," to which the archive guy responds, "I don't think so. Student transcripts are confidential. Sorry." Gwen then uses the same "trick" that Van used to get Gwen out of class earlier in the movie, setting off the sprinkler system so that the archive guy evacuates the building, allowing a suitably clothed Gwen free access to the archives!

Answer: Van has been 18 units shy of graduating for the past 6 semesters.

Armed with the information that Van has been 18 units shy of graduating for the past six semesters, Gwen asks Van what is going on with him, as he is clearly actively trying not to get out of Coolidge College, and why he is putting off his life. She says she wants to know "not for the paper, for me". Clearly upset by this intrusion into his confidential files, Van says, "I have no comment, for either of you," then turns round and walks away.

Answer: Lindsey and Rob's engagement party

Whilst attending Lindsey and Rob's engagement party, Richard decides it's the perfect time for him and Gwen to get engaged themselves. He gets down on one knee, opens up a small box to show a sparkling engagement ring and says, "Gwendolyn Elizabeth Pearson - I'd be honored if you and I surgically and spiritually grafted our lives together."

Gwen is clearly unsure, and when she realises that Richard has already "told everyone" about their "engagement", she walks off, responding to Richard's question of where she is going with, "I'm not sure, and for some reason I feel really good about that."
5. Why does Van get expelled?

Answer: It is believed that he had served alcohol to minors at a party.

Van is throwing yet another of his famous parties, when we see Richard and his friends turn up. Jeannie distracts Hutch, who is tending the door to make sure only those invited get into the party, and whilst his back is turned, Gordon ushers a load of schoolkids into the party. Having received an anonymous tip off (no doubt from Richard), a Trooper turns up to enquire about some underage drinking. Sure enough, a couple of the schoolkids, who are clearly intoxicated, come out from the party, and Van's fate is sealed.

Answer: Milty Mingleton

We were first introduced to Milty Mingleton at the Save the Swim Team Speedo Spectacular, naturally organised by Van, earlier in the movie. In that scene, Milty was wearing a rather figure hugging pair of Speedos which had the words "Save the Swim Team" on the back.

He is more normally dressed in this appeal scene, however his weight is clearly too much for the rope on which he is abseiling down the building, as it snaps and sends him dropping to the ground, which is fortunately not too far below. Our fears for Milty's well-being are further allayed when we hear him call, "I'm okay."

Answer: Leisure Studies

Accepting that he was responsible for the party in which minors were supplied with alcohol, and therefore unable to argue against the infraction of which he is accused, Van instead lays himself at the mercy of the court and suggests an alternative punishment - "make me graduate". He continues thus...

"If you'll kindly take a look at my transcripts you'll see I'm a mere 18 units shy of graduating with a degree in leisure studies. I am pleading to this committee, reinstate me. Let me audit my last six classes, take the necessary finals and leave Coolidge with a degree."

...thus leaving the deciding vote to Professor McDoogle, who we have seen a few times earlier in the movie is not Van's biggest fan. However, against expectations, Professor McDoogle declares, "You know, I've waited a long, long time for this day to come. Either way Van Wilder's tenure here at Coolidge is over. Let's see what the kid's made of."

We see Gwen adding a rather generous portion of (Mega) Colon Blow to Richard's protein shake, which he seems to thoroughly enjoy, unaware of the troubles he is soon to encounter! We flip to the exam scene, in which we see Richard becoming more and more uncomfortable as the Colon Blow starts to take effect.

The sign at the front of the exam clearly states "No Bathroom Breaks", so when Richard realises he need to finish the exam fast, he decides to simply make each of the remaining multiple choice answers as "C", then makes a dash for the bathroom. Unfortunately for Richard he is intercepted by one of the doctors who is on his oral exam board, who decides to introduce Richard to his future alumni. You'll have to watch the movie to see what happens next!

Having made some not particularly positive comments about Van's dorm room, Professor McDoogle says, "Just as I expected, you succeeded. Ninety-one percent."

Van is absolutely shocked by the news. Professor McDoogle says, "I'm proud of you, Wilder. I've been waiting all these years for you to realize your potential," to which Van replies, "That's why you and I had friction? I thought it was 'cause I fooled around with your daughter freshman year," which is clearly news to Professor McDoogle!

During the final scene, which is, naturally, a party (this time to celebrate Van's graduation), we see both Taj and Van also achieve romantic success. Firstly, Taj literally bumps into a girl, who then introduces herself as Orissa Punjab Nizamabad, saying she has just transferred here from Banglapur - the same place that Taj is from - and Taj is clearly instantly smitten. A little later, after Van's father has turned up to congratulate his son and say how proud of him he is, we see Gwen arrive, put a Hawaiian lei over Van's neck, and then plant a kiss on him.
