Jenny is quite eccentric. Being tired of waiting, this 'picture of togetherness and sanity (as she defined herself)' starts to question her abilities as a writer and burns her 'manuscript' (I believe Jenny did not notice it was already typed).

Jenny tells Moira about her job while she is burning the novel. She seems excited about it. Being a waitress is not something new to Jenny, she previously had this job before leaving Los Angeles.
