1. Captain Kirk
Answer: James
Captain Kirk's full name was James Tiberius Kirk, though the middle name was not given during "TOS". He was called Jim, Jimmy, James, or James T. His middle name was given during an episode of "Star Trek" ("TAS"); it wasn't considered canon until years later.
In the second pilot (the first second-pilot ever made for US TV show), a deranged LCDR Mitchell (Gary Lockwood) uses his new god-like powers to carve a headstone for Kirk which said "James R. Kirk". During the remastering done to "TOS" episodes in the 2000s, it was debated whether to fix this. The amount of work to do this was deemed excessive, and it was left with the wrong initial.
2. Captain Sisko
Answer: Benjamin
He was called Ben or Benjamin by his friends. During a fantasy/alternate reality, his character (a deranged science-fiction author) was called Benny.

3. Captain Janeway

Captain *Nicole* Janeway was initially played by French-Canadian actress Geneviève Bujold. But a combination of factors led her to quit after just a day and a half of filming the pilot episode.
Producers then replaced her with Kate Mulgrew. At her insistence, they changed the character's name to Kathryn. (In later episodes in the show, Q would teasingly call her "Kathy", much to the captain's annoyance.)
Katherine Kiernan Mulgrew has played two other characters with variations of her given name: Kate Columbo (later Callahan) in "Mrs. Columbo" (they didn't really follow up on her being married to Peter Falk's Detective Columbo); and Katharine Hepburn in the one-woman play "Tea at Five".
4. Captain Archer

Archer's father was warp engineer Henry Archer. It was Henry's design that ultimately became the heart of the NX-01 Enterprise. Jonathan Archer was also one of the primary test pilots for Earth's warp engine tests.

5. Commander Scott

He was called Scotty, Mr. Scott, Lt. Commander Scott, or Commander Scott throughout "TOS". He was first referred to by his given name during the deposition scene in episode "Wolf in the Fold".
6. Lieutenant Torres

Her Klingon name and cranial ridges earned her undeserved teasing in school, many times causing her to react violently. One of her teasers called her "turtle-head".
Her boyfriend at Starfleet Academy, Maxwell Burke, called her BLT (short for bacon, lettuce, and tomato sandwich), based on the sounds of the syllables in her name. She playfully called him pataQ, a Klingon insult (which has never really been equated to an English term).
7. Yeoman Rand

Yeoman Rand (played by Grace Lee Whitney) was one of the few crewmen to be given a first name. (Sulu and Uhura only received names via "Star Trek" novels.) She had a crush of sorts on Captain Kirk, which she revealed in the "TOS" episode "Miri".
Sadly, the character was written out of "TOS". Whitney said she was sexually assaulted by one of the executives of "Star Trek", but never named who it was. She was dismissed shortly after the incident. Other factors probably contributed to her dismissal, though series creator Gene Roddenberry said it was the "dumbest mistake" he ever made.
Rand appeared in cameos in the later movies, and then was a co-star in the "Voyager" episode "Flashback".
8. Chief O'Brien

Miles O'Brien was an engineer aboard the USS Enterprise-D, and chief of operations on Deep Space 9. The character appeared in a total of 211 "Trek" episodes, second only to Worf (Michael Dorn).
Played by Irish actor Colm Meaney.
9. Dr. McCoy
Answer: Leonard
Dr. McCoy (played by DeForest Kelley) was the chief medical officer of the USS Enterprise NCC-1701. He, Kirk, and Spock were the three main characters (and whose actors were the only ones listed in the main title credits).
He was significantly older (~10 years) than his human crewmates. This was explained in "ST" books by saying he'd become a doctor before he joined Starfleet.
10. Lieutenant Yar
Answer: Natasha
Lt. Yar (played by Denise Crosby) was only a regular character for most of the first season of "TNG". Crosby felt she was not being utilized well, and left the series to pursue her movie career. She did make return appearances as an alternate reality version of Yar, flashbacks, or as alternate-Yar's half-Romulan daughter, Sela.
