What type of plant does a dragon fruit grow on?

Dragon fruit comes from the pitaya flower which blooms at night and must be harvested quickly and preserved before it wilts the following night. Pitaya are cactus "vines" that are fertilized by bats in Central America! Dragon fruit is rather odd looking inside with white flesh and several black seeds. So what does it taste like? It is said to be like a combination of Kiwi, pear, and mild citrus. Sounds delicious!
