As the dough touches the tray, a very thin film of pastry is built up, and eventually forms a delicate pancake or crepe. In a pinch, phyllo dough can be substituted for recipes which call for warka.

Traditional shish barak (shishbarak) are very small tortellini-like pies. The pastry usually used - rakakat - is softer and more pliable than phyllo dough, but phyllo dough or wonton wrappers are acceptable alternatives. The dish is usually served with rice and/or bread.
Fatteh is a dish which uses a flatbread foundation for an assortment of toppings. Sayyadieh is a fish and rice dish. And, musakhan is a chicken pie with onions, sumac and fried pine nuts.

Depending on the amount of time you allow the yogurt to drain, you can have a yogurt cheese that is perfect for dipping or spreading, or a much stiffer product that can be shaped or molded. It can be served plain, spices can be added, or even jam swirled in for a breakfast spread.

Kubbat Halab is a type of kibbeh (kibby), consisting of a rice-based crust and a stuffing of minced meat, onions and spices. The Kubbat Mosul is similar, but the crust is made with bulgur. The kibbeh is a popular dish throughout the Middle East - and in Latin America.

Kleichas are considered the national cookie of Iraq. Usually scented with cardamom, and made with rose water, kleichas can be made in different shapes and have different fillings. A date filling is traditional, but there are variations which include a mixture of walnuts and sugar, coconut and sugar, and dates and sesame seeds. They go well with tea or coffee.
