Quiz Answer Key and Fun Facts
1. Which of the following sushi items is served cooked?

Answer: Kani

Kani is crab. It is not served raw. Other items that are cooked include ebi (shrimp) tamago (egg), soft-shell crab, mussels, and the different varieties of eel.
2. What is that green pasty stuff called that is served as a sushi condiment?

Answer: Wasabi

Wasabi is also called Japanese horseradish and it is HOT! Some unfortunate sushi first-timers have assumed it is indeed guacamole or an avocado product...
3. And what is that green stuff a variant of?

Answer: Horseradish

Used sparingly, wasabi - the Japanese horseradish used in sushi - is an excellent food enhancer and sinus clearer!
4. Which of these dishes is typically served accompanied by the deep-fried head of the creature that was transformed into sushi?

Answer: Ama ebi

Ama ebi is 'sweet shrimp', a special variety served only raw. While sushi gourmets appreciate the crispy treat, many diners are unnerved by the beady black eyes peering up at them from the plate!
5. Which of the following sushi types is not a mollusk?

Answer: Unagi

Unagi is freshwater eel, a fish. Ika is squid, mirugai is clam, hotategai is scallop.
6. What is the Japanese name of the seaweed that is used to wrap most sushi?

Answer: Nori

The sheets are made from the purple laver seaweed, pressed, dried and toasted.
7. Which of the following sushi varieties are vegetarian?

Answer: All of them

Kappa maki is cucumber, umeboshi is pickled plum, and inari are fried tofu pouches stuffed with rice.
8. Which sushi is made from a sweet, thick egg omelet?

Answer: Tamago

Absolutely delicious, and good for the first-time sushi explorer.
9. What is uni?

Answer: Sea urchin eggs

Not my favorite, but some love its color and texture.
10. What word, as it is typically spelled on American menus, means both a type of Japanese alcoholic beverage and salmon when said out loud?

Answer: Sake

I have been informed that the Japanese spellings are actually different.
11. What is the richest cut of sushi tuna called?

Answer: Toro

It is the fattiest cut, from the belly of the tuna.
12. OK, now for a less appetizing morsel. All of the following are genuinely used in sushi, but which one is called shirako?

Answer: Sperm sacs of the codfish

I have not seen any of these in US sushi restaurants, however! I was informed by larstheodd that "You can get shirako at Sushizo in Los Angeles. It comes with the "small" omakase for $45.50. You might also find it at Urasawa in Beverly Hills, but I haven't been there yet - prices start at $250.00 per person and $350 is the norm. You might see celebrities there, however. Tom Cruise likes it."
13. What is the Japanese name for the pickled ginger served alongside sushi?

Answer: Gari

This ginger is dyed pink; its natural color is off-white.
14. Which of the following is not typically found in a California roll?

Answer: Cream cheese

One of the pedestrian, popular types of 'mass-market' sushi, usually made with fake crab.
15. What distinguishes sushi from sashimi?

Answer: Sushi is made with rice, sashimi is just raw fish

Sashimi, like sushi, is presented in a very artistic manner.
