Quiz Answer Key and Fun Facts
1. France: Dauphinoise gratin includes potatoes, cream and what other ingredient?

Answer: Garlic

This classic French gratin dish is cooked in a shallow oven proof dish without a lid so the top turns crunchy and golden brown. Dauphinoise gratin originates from the Dauphine region of south-east France. The traditional cooking method asks for garlic to be rubbed on the inside of the shallow dish before other ingredients are added
2. England: Stargazy pie has a pastry crust with eggs, potato and what other filling?

Answer: Fish

Stargazy pie is a traditional dish from the small harbour village of Mousehole in Cornwall, south-west England. The outward appearance of the pie is different to others because instead of all the ingredients retaining inside the pie, the pilchard fish heads used in the recipe protrude through the top of the crust, giving the impression they are staring at the sky.
3. Russia: Chicken Kiev is a hearty dish which includes chicken breast, garlic butter, herbs and what other ingredient?

Answer: Breadcrumbs

Many people incorrectly thought this dish was named after Kiev, the capital city of Ukraine. It was in fact created in the 18th century by French chef, Nicolas Francois Appert, when he visited Russia, as the aristocracy of the country were very interested in French cuisine at the time. Boneless chicken breasts are pounded with garlic or herbed butter, coated in egg and breadcrumbs before being fried.
4. Australia and New Zealand: The popular Anzac biscuit includes flour, butter, sugar, coconut and what additional ingredient?

Answer: Rolled oats

These traditional biscuits were first introduced by the woman of Australia and New Zealand during World War I to send to husbands, sons and brothers, fighting in Gallipoli. Their concern was that their male family members were not receiving enough nutrition, so as well as tasting delicious, the biscuits had the additional value of including healthy ingredients which would last well during transportation to the troops.
5. Japan: Teriyaki is a dish of meat, fish or vegetables, coated in which additional ingredient?

Answer: Soy sauce

The word Teriyaki means "teri", the shine given by a sugar coating, and "yaki", the word for broil or grill. The meat, fish or vegetable is cooked using these methods while marinated in a mixture of soy sauce, sugar and mirin, a low alcohol spirit similar to sake.
6. Greece: Taramasalata is made with olive oil, lemon juice, bread crumbs and which key ingredient?

Answer: Fish Roe

The traditional method of making taramasalata asks for salted and cured roe cod or carp, mixed with olive oil, lemon juice, bread crumbs, or even mashed potato. It is served as a dip with bread or chopped vegetables. The Greeks normally eat the dish on Clean Monday, the first day of Easter lent in Eastern Orthodox Churches.
7. India: Aloo Gobi is a warming vegetarian dish which includes potatoes, spices and which other vegetable?

Answer: Cauliflower

Aloo Gobi, or Gobhi Aloo, is an Indian vegetarian dish, also made in Pakistan and Nepal. It is simply made by steaming potatoes and cauliflower then finishing off by frying in a pan with spices including turmeric. The addition of turmeric gives it a natural yellow colouring. It can be filling as a main meal, or as a side dish eaten with a variety of Indian breads.
8. Italy: Penne all'arrabbiata is a filling pasta dish with garlic, tomatoes, olive oil and which other ingredient in its sauce?

Answer: Red chilli peppers

Penne is a tube like pasta and is often served with arrabbiata sauce. Tomatoes, garlic and olive oil are the base of this sauce, but the real kick comes by adding red hot chilli peppers. It turns the pasta dish from something mild into something extremely fiery, all dependent on how much chilli is used. The Italian word arrabbiato means "angry".
9. America: Shoofly Pie is a pie crust desert with a crumb topping and which base ingredient?

Answer: Molasses

Shoofly pie is a traditional dish associated with Pennsylvania Dutch style of cooking and is a favourite within the Amish community. Similar to Treacle Tart, the pie has a pie crust base with a molasses filling and topped with a crumb topping. The name is believed to derive from when the pies were cooked outside, and when cooling away from the ovens, flies used to be attracted to the sweetness and settle on top.
10. Spain: Gazpacho is a cold soup containing water, olive oil, garlic, onion, cucumber and which other main ingredient?

Answer: Tomato

This cold and refreshing soup originated from the hot region of Andalucia in southern Spain. It can be simply made by adding all the ingredients to a blender and then serving cold. The most favoured method used by Andalucians involves pounding all the vegetables using a mortar and pestle before adding the liquid ingredients.
