Guinness's web site says they prefer the all-Irish mixture of Guinness and Harp Lager, but many pubs use Bass Ale or Smithwick's. I actually like the Guinness and Strongbow Cider mixture, sometimes called a poor man's Black Velvet.

The traditional Black Velvet is used with fine Champagne.

Answer: Specific Gravity

Most people would assume that a darker beer is also heavier and thus should not float on a lighter one, but in reality, the color depends on the degree of roasting of the malt, not on the gravity. Viscosity also plays a role in the process - without sufficient viscosity, the beers would quickly mix - but the main reason is simply the relative weight.
