Quiz Answer Key and Fun Facts
1. This piece of equipment measures the gravity of your beer.

Answer: Hydrometer

The gravity of the beer gives lets you know what percentage of alcohol your beer is going to be. It's best to take a gravity reading at 60 degrees Fahrenheit (15.56 Celsius) before your boil, after your boil and after fermentation.
2. This technique rinses all the extra sugars from the grains after mashing.

Answer: Sparging

Be careful when sparging as you can sparge with water that's too hot and or sparge with too much water. If this happens, you'll negatively affect the flavor of your beer.
3. You should add the yeast immediately (within two minutes) after your boil.

Answer: False

You have to chill your wort to at least 70 degrees Fahrenheit (21.11 Celsius) or else you'll kill off your yeast.
4. This compound causes a common flaw among new homebrewers that causes beer to have a popcorn butter flavor.

Answer: Diacetyl

Diacetyl is either caused by improper fermentation temperatures or taking the beer off the yeast too early. While diacetyl is acceptable in low levels in a handful of styles, it should never be prominent.
5. Glass brewing equipment does not need to be sanitized.

Answer: False

Sanitation is the most important and easiest part of home brewing. Make sure you sanitize everything your beer comes in contact with because if you don't, it's likely that your beer will not turn out very good.
6. What is beer called without yeast?

Answer: Wort

Wort is what goes into your brew kettle and what you add hops and other flavorings to. As mentioned in a previous question, it is very important to keep your wort free from anything that could cause contamination.
7. Which of these styles of beer would you have to lager?

Answer: Pilsner

Lagering is fermenting beer at low temperatures for extended periods of time. Lagers certainly aren't for beginners as they take meticulous temperature control and often times have a complicated mashing process.
8. Adding hops to fermenting beer is called what?

Answer: Dry hopping

This technique gives the beer a more prominent hoppy flavor. Adding other ingredients to the fermentor is common too like vanilla beans and coffee.
9. This is another compound that causes a common flaw that gives your beer flavors of corn, cooked cabbage and in extreme cases cooked shellfish.

Answer: Dimethyl Sulfide (DMS)

This problem is common, especially with beers that use lighter colored grains. It is easily remedied however, with a long, rolling, uncovered boil. Like diacetyl, DMS is acceptable in low levels in a handful of styles but again, should never be prominent.
10. When not in use, hops should be kept refrigerated.

Answer: True

Hops are meant to be used fresh and generally don't last very long. When you're storing hops, keep them cool, or frozen if you store them for an extended period. Hops kept at room temperature can easily dry out and make your beer taste bad.
