I prefer my button mushrooms sauteed...but they are also lovely raw in a salad! Button mushrooms are also known as Champignons and are the same as Cremini, mentioned below.
2. There are quite a number of Japanese varieties of mushrooms. Which of these is not one of them?

Answer: Shimezu

Enoki is the shortened version of enokitake, a very thin, delicately capped mushroom that comes in bunches. Shiitake are umbrella shaped mushrooms that are often quite dark. They often come in dried form and are called 'donggu' in China. Matsutake mushrooms are gathered from red pine woods in Japan and have a very short growing season in the Fall.

These mushrooms are expensive, due to the short growing season and limited cultivation.
3. Also known as Bolete or Cepe, these rather large, thick-stalked mushrooms have reddish caps. They are more commonly known by what name?
